Glad the hot pads arrived safe and sound. One just never knows anymore. They matched your apron and set perfectly. Thanks for the tip ages ago about The Spice House and Aleppo pepper. Their Little Italy blend of Italian herbs is, hands down, my favorite Italian blend. Not overpowered with oregano and it has dried lemon. Mellow and nuanced. We are, finally, getting some decent seafood stores here in central NC where I live. Sadly, the liquor stores are all state run and it's next to impossible to find French vermouth (so much better than Italian). Send good thoughts to our Appalachian region. It's a mess . . .

Watched it… and then made one! I just so happened to have fish (that I was just planning to fry) and parchment paper. I used olive oil, oyster sauce and soy sauce with onion and garlic. It does look nice when it comes out and you put it on a plate!

Randy Another great video… I have a dish suggestion…banana pudding! I have had it over the years and it was…ok…then at an ‘end of summer barbecue party’ a few weeks ago..(catered event) the banana pudding they served for dessert was out of this world fabulous…would love to get a Randy Sharp version of banana pudding…

HI Randy. I love fish en papillote and like your idea of tying the paper. My question is: how do you keep the lemons from turning the fish bitter? I like the presentation with lemons but they always ruin the dish for me
