very nice. my mother used to make a version of this. i just made some for the first time in years, so tasty with ginger, green onion, garlic and black bean sauce. tilapia is my favourite because not many small bones and sweet flaky white meat. i use the pre-made garlic black bean sauce, but it must taste better the way you make it from the whole bean and ingredients with the mortar and pestle. i still remember the last part when she'd finish it off with the hot oil poured over it. your tangerine peel and hot chili are something to try now with it

Thank you chef, I just made it for our dinner. Very subtle flavours and really different to what I have done before. Really nice. Keep up the good work.

Thanks! Shrimp in Black Bean Sauce used to be one of my favorites. Using fish instead sounds really good. Can't wait to try this.

That will be my next project tomorrow. Ive been experimenting on different dishes everyday since the lockdown lolz. But ill buy a different fish, maybe grouper. I dont eat tilapia. When i was a kid, i used to have tilapia in my home aquarium, and i even named 1, fred. lolz. So eating tilapia is like eating my friend. And i dont eat my friends lololol

Gorgeous!! Do you think this would work with red snapper? I’m not a huge fan of tilapia.

Yes. Red snapper is good to go. Wish you will enjoy your fish.

Are the black beans from a can?
@TasteofAsianFood5 жыл бұрын
The one I use is in a glass bottle. Over here it is sold loose in the wet market too.

Taste of Asian Food in Australia we can be y them canned or dried. Thankyou for your reply

@@warialdasue fyi the 'black beans' in Chinese cooking actually refer to a type of fermented soy bean which turns them black, so they're not the same kind of black beans you would use in for example a Mexican dish. The come in jars or packets and the texture is dry but sticky and they are very salty and have quite a strong smell. In Australia you will find them in Asian grocery stores or you might find them in the Asian section in Coles or Woolies etc.

@@warialdasue no probs. Also, I'd recommend giving them a bit of a quick rinse under cold water to get rid of excess salt before using (especially the ones that come in packets as they tend to have lots of salt to keep them preserved), otherwise they're very salty. Enjoy!
