THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private. We purchased it in 1987. It has a maximum depth of 12’. The small pond uphill from it is ¾ acre with a maximum depth of 12’.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS AND RETURN LARGER BASS: We had biologists perform an electroshock survey of the lake. They found too many small, stunted bass. There is only so much biomass to go around, and there are too many mouths to feed. Their advice was to remove all bass under 12”, and to release the bigger ones. The principal camera is my iPhone X on a tripod. I also use an iPhone 6s Plus as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode mic indoors to help lessen the echo. The video is edited on a MacBook Pro using Final Cut Pro X.

RICED CAULIFLOWER:
INGREDIENTS:
20 to 24 oz. of riced cauliflower (either fresh or frozen)
5 to 8 ounces of chopped onion (1 small onion)
4 TBS of butter (½ stick)
¾ to 1 teaspoon salt
1 teaspoon Chinese five-spice
½ teaspoon of freshly ground pepper
DIRECTIONS:
In a very large skillet on medium heat cook onions in butter until soft and translucent
Add riced cauliflower and cook for 20 minutes, or until soft and like rice.
Add Chinese five-spice, salt, pepper. Stir well and serve.
FISH IN BLACK BEAN SAUCE

INGREDIENTS:
One and ½ pounds of any white fish fillets
6 TBS Lee Kum Kee black bean sauce
1½ medium onion (cut into eighths)
18 dried chilies (deseeded)
2 green bell peppers (roughly chopped)
1 red bell pepper (roughly chopped)
6 stalk scallions (cut into 1.5 inch lengths)
2 teaspoons of ginger paste
½ teaspoon fish sauce
2 teaspoons sugar (or sweetener equivalent)
1 teaspoon sesame oil
2 teaspoons of crushed garlic (optional)
1 cup of water
½ teaspoon guar gum
2 or 3 TBS of cooking oil for skillet
DIRECTIONS:
Heat up a large skillet (or wok) and add in cooking oil. Add onions, bell peppers, dried red chilies, ginger paste, crushed garlic and stir fry them until aromatic and soft.
Add in the fish and do a quick stir. Add the black bean sauce, fish sauce, sweetener, and sesame oil. Stir fry until the fish is cooked.
Mix the guar gum into the cup of water using a strainer and stir vigorously. Add the water to the pan and stir. The sauce will thicken in a short time. Toss in the chopped scallion and do a quick stir. Dish up on a platter and serve hot with riced cauliflower.
