Four years ago I made fish in black bean sauce. Now, I’m craving it again. I picked up all I need at the Asian market except the fish! Let’s shop for some at our open air fish market. Click on SHOW MORE for info on the tackle, lake, recipes and more.

THE BOAT: Bass Hunter EX, purchased 2018. It can be ordered here: www.basshunter.....
THE MOTOR: Minn Kota Endura C2-55 Trolling Motor (36" Shaft), 55 LBS of thrust. It runs on a 12v, deep cycle battery. Purchased on amazon, 2018.
THE LURES: a Z-Man Finesse TRD in coppertreuse on a 1/15 oz Z-Man ShroomZ jig head, and a 2.5 inch Action Plastic’s Shad Grub in black on a 1/16 oz. lead jig head.
THE BAITCASTING REEL is a Shimano Calcutta 50B, from 2004. This model is no longer made.
THE BAITCASTING LINE is Firewire Stealth Braid in moss green, 15 LB test, 4 LB mono equivalent.
THE BAITCASTING ROD is a Shimano Compre, CPC66ME, 6’ 6” fast action, med. power. Lure weight 1/4 - 5/8 oz. ounce. Line weight 8 - 15 LB test. Purchased 2018.
THE SPINNING REEL: Garcia REVO2SX10, 2018.
THE SPINNING ROD: Daiwa SMD401ULFS Spinmatic-D SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 LB test).
THE SPINNING REEL LINE is SpiderWire, Ultracast, Invisi-Braid in 10 LB test, 2 LB mono equivalent.

THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private. We purchased it in 1987. It has a maximum depth of 12’. The small pond uphill from it is ¾ acre with a maximum depth of 12’.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS AND RETURN LARGER BASS: We had biologists perform an electroshock survey of the lake. They found too many small, stunted bass. There is only so much biomass to go around, and there are too many mouths to feed. Their advice was to remove all bass under 12”, and to release the bigger ones. The principal camera is my iPhone X on a tripod. I also use an iPhone 6s Plus as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode mic indoors to help lessen the echo. The video is edited on a MacBook Pro using Final Cut Pro X.

RICED CAULIFLOWER:
INGREDIENTS:
20 to 24 oz. of riced cauliflower (either fresh or frozen)
5 to 8 ounces of chopped onion (1 small onion)
4 TBS of butter (½ stick)
¾ to 1 teaspoon salt
1 teaspoon Chinese five-spice
½ teaspoon of freshly ground pepper
DIRECTIONS:
In a very large skillet on medium heat cook onions in butter until soft and translucent
Add riced cauliflower and cook for 20 minutes, or until soft and like rice.
Add Chinese five-spice, salt, pepper. Stir well and serve.
FISH IN BLACK BEAN SAUCE

INGREDIENTS:
One and ½ pounds of any white fish fillets
6 TBS Lee Kum Kee black bean sauce
1½ medium onion (cut into eighths)
18 dried chilies (deseeded)
2 green bell peppers (roughly chopped)
1 red bell pepper (roughly chopped)
6 stalk scallions (cut into 1.5 inch lengths)
2 teaspoons of ginger paste
½ teaspoon fish sauce
2 teaspoons sugar (or sweetener equivalent)
1 teaspoon sesame oil
2 teaspoons of crushed garlic (optional)
1 cup of water
½ teaspoon guar gum
2 or 3 TBS of cooking oil for skillet
DIRECTIONS:
Heat up a large skillet (or wok) and add in cooking oil. Add onions, bell peppers, dried red chilies, ginger paste, crushed garlic and stir fry them until aromatic and soft.
Add in the fish and do a quick stir. Add the black bean sauce, fish sauce, sweetener, and sesame oil. Stir fry until the fish is cooked.
Mix the guar gum into the cup of water using a strainer and stir vigorously. Add the water to the pan and stir. The sauce will thicken in a short time. Toss in the chopped scallion and do a quick stir. Dish up on a platter and serve hot with riced cauliflower.

Hi FB! I have to say that I'm probably finished making videos. Even a short one would thrust me back in a loop of social media obligations like watching and commenting on dozens of other KZbinrs, all of whom are very nice, good people. But doing that had become a full time job. I hope you understand. Thanks again for following Ms. Lulu and me over all the years, and for missing us. We miss you too!

The ole open air fish market came through once more. It makes me want to go shopping... Until I saw the ice on your line. My chair is warm and comfortable. I was expecting that Massive bass that lurks by the lily pads to make an appearance, maybe spring. Yes, I did notice the knife flip. Be sure to tell Miss Lulu we say "hi" but don't be too assertive about it. lol

Hi Anthony! It's getting more difficult to catch fish, the colder it gets out there. But luckily, I had enough for dinner. After 4 hours outside, it started to feel miserable. There was no sign of the monster bass I was hoping for. After hearing Ms. Lulu's take on the "Johnny and Dora Story," I'll watch my Ps and Qs with her. It is always a pleasure to visit your "Open Air Fish Market", John! It amazes me though, how many of us can get into that boat of yours at the same time to go with you! You may have been cold, but we weren't (I guess we were sitting on the sunny side of the boat). I must say, after chasing Miss LuLu since 1966, you would think she had softened and warmed up a little more to your "long=term" advances. Nevertheless, after she verbally responds to you, she always gives you a hug... what a tease, just enough to make you invite her back for another visit and meal. Maybe she's just hanging around for the free cuisine???

Hi Tommy! Hahaha, once again I used the Open Air Fish Market to secure fish for this Chinese dinner. I sometimes get over 3,000 of us a week into my little boat, and that's fine with me as long as everyone is smiling and keeping warm. 😊 You would think that Ms. Lulu would be a bit more affectionate to me after all these years, huh? Brrr...I was shivering with you out in the boat. I almost expected the bait to bounce off a layer of ice. But you did really good! ( Did I catch a glimpse of roe? Fried in butter, it's yummy.) Those are some healthy looking fillets. I love Chinese five spice powder; just used it in my most recent batch of cookies. You've made many wonderful dishes, and this one is no exception. It's beautiful to look at and must have been delicious!! Hope you didn't get buried when the two most recent snow storms came through. Hi Stef! It was cold out there! The first couple of hours are not a problem, but by the fourth hour, the cold penetrates to the bone. • Yes! That was roe. I should have kept it. You were the one to make me aware that it's delicious when breaded and fried. • We have a Chinese restaurant nearby where I first tried this dish. I was so impressed that I searched until I finally found this recipe. It turned out just like the dish in that restaurant. • We had about 5 inches both at our weekday house and at the getaway at the lake. I'll bet you got more! There's nothing quite like catching fish when ice is forming on your line and in the guides on your rod - it makes it all worthwhile! And I tell you, I could smell that delicious dish cooking. Definitely another one I'll be adding to my list!

I do some fishing late in the year. Bring a thermos of warm water to pore on the line to get the ice off. Works great even on musky line.

We travel out to our shabby chateau by the lake every weekend still, but no one is within a mile of us out there. Of course we go food shopping, but that's as close as we get to anyone. Juanelo1946 thank you for the kind reply. I’m glad you and Lulu have this special place. Many of the places we walk are closed because of the virus. Including all state parks and beaches in Rhode Island. My town is on border of Mass and RI. Migration has started and sadly I won’t get to see the shore birds. So sad how fast all our lives have had to change. I’ve been pretty run down from chemo. Day at a time. Stay well and safe. Hope your having fun fishing and cooking up your yummy meals. Wow John this meal looks soooooo good and easy to make. I think I can pull this off and I know Chris would love it. I was at the Asian Market last week and got black Bean sauce. Now I know what I’ll do with it. I have never tried 5 spice. I’ll get that next time I shop. Lol Lulu and Dora funny Gals. Hi Brenda! Brrr, winter came early to the eastern half of the country this year, and fishing has become more and more challenging. But I urge you to try this recipe with tilapia, cod or whatever white fish you prefer. I ordered fish in black bean sauce at a local Chinese restaurant. I can never truly explain how much I love your videos in the both of you guys doing these videos you guys are the greatest looking couple that looked absolutely amazing the food look fantastic and it sure did get cold this week we got nine inches of snow and then a couple days after that got down to 4 degrees with -8 wind chill where I live just outside of Ann Arbor thanks for the great video look forward to next week on my way down to Huntsville Alabama right now

Excellent show in every respect, John. Braving the arctic blast we had a week or so ago was a feat in itself. I successfully skirted the icy line guide days by staying put inside, but that early arctic blast was colder than snot here with record breaking low temps. Icy line guides are a mess and very annoying! Did you happen to get a water temp at Lake K? Obviously the fish were still biting and, as it usually goes, persistence and finding the right lure eventually paid off. It's funny, too, that fish seem to be on some sort of clock. Sometimes it seems like nothing is happening and all of a sudden the switch goes on and they bite...and then it goes off and that's that. Good job finding the black grub/meal worm combo pattern; it was just the ticket. Your fake rice and the bass in black bean sauce looked really good. I for one certainly forget that many cultures prepare fish in a variety of ways whereas hereabouts (except in upscale restaurants) fish are typically breaded and pan or deep fried. It was interesting to see how you removed the seeds from the little red peppers. I enjoy some hot peppers but not surface of the sun hot peppers where you appear to be weeping during dinner. OK, so on the subject of impressing Miss Lulu with your manliness and forte, once again her intel network had clued her in on what actually happened with neighbors.....oopsie, he was hiding under the bed. Ah, well, although she blew up your plan, you still enjoyed a romantic evening like the many you have had since 1966. Looks like we are returning to more seasonal temperatures for a while at least so as the saying goes 'it aint over till it's over'. Hi Don! The weather didn’t bother me that day until about hour four. Then I started to feel it straight through to my bones. The cold lasted even through this past weekend, when once again my lines and guides froze up. I did check the surface temperature of the water that Nov. 8th day, and it read 47.5°. This weekend it was even colder than that, very close to freezing. In fact, Friday was so cold that the on and off clock in the fishes brains never switched on. I managed only one little perch. • Years ago I ordered fish in black bean sauce at a local Chinese restaurant. I was so impressed that I finally tracked down this recipe for it. It worked! Now I can enjoy the dish at home. This is not to say that I don’t love breaded and fried fish too. Removing the seeds from the dried peppers was in the recipe, and for good reason. The dish had just the right amount of heat without igniting our tongues. • How is it that Ms. Lulu always seems to get a more detailed picture of our neighbors’ lives than I do? Her understanding of them always seems to wreck the idealistic picture I get. Although I was thwarted once again this week, I have a new strategy to win her heart next time! • Now it’s sunny and much warmer today here too already. I should be out fishing! John, fyi I went float tube fishing yesterday because we were in a heat wave (hahaha) with air temperatures in the mid 40s. The water was 40 and 41 degrees...quite cold. I'm working on the video today as I was able to pattern a goodly number of crappie with a bonus 19 inch bass. You will appreciate the pattern when you see it. Hi to Jeanne again, Don and the gang

Don't recall watching that recipe but I am sure I did! Looks delicious as you made it, and nice to see you are using guar gum like a true professional chef! Guar gum is helpful in lowering cholesterol too, and derived from a plant, is all natural. Beautiful beanie bass dish at 9:36 ! Hey nice to hear from you again Juanelo! No, not an encyclopedic, simply been in the food manufacturing industry for most of my civilian professional career, so I have picked up some stuff that is useful and I am willing to share. ("Food Safety" and its ups and downs are real winners, in my book) Yeah, go with Guar Gum over Xanthan for low carbs...always the better. Stay away from pre-ground meat (burger/chicken/turkey) in packs or chubs. Same with pre-made frozen patties of same. Just for general safety. Overall, we as a country do amazingly well as far as food safety is concerned. Anyway, please give Miss Lulu Cheeks a gentle hug from me and let her know I appreciate her being in your videos. You two look so nice at the end of each one....it is so sweet, regardless of the snarly comment! :)

11 15/16ths... how lucky can one man get 😁 Seriously though, watching you cruise out of your classy covered dock to brave the freezing elements, even frozen fishing line, and 'cool' breezes was a real joy to behold. The recipe looks great too! Thank you and Lulu for brightening our days. ps. have you considered making your own cauliflower/rice? it's really very easy and cheaper. I've started to do it all the time now. A few bumps in a food processor and bob's your uncle. It freezes easy and keeps fresh in the fridge too.

Hi R.L.! It was 11 and 15/16, give or take a half inch. 😁 After 4 hours, the refreshing cool breeze was enough. I was frozen to the bone! I used to always break down and process my own cauliflower rice. In fact, you can see me doing it in my older videos. But cleaning out the food processor each time was just too much, not to mention the mess of little grains all over the place. I was delighted to see it finally come out in pre-riced form. So kudos to you for tackling the job eagerly! 😊 Thanks so much for looking in on us and for your kindness my friend!

Me and Mawgwe and Brandon loved another one! Well,we had the grandyoungins again this weekend and we are dead people. It was about 60 degrees here today. Looks cold in your video. We can,t get mealworms here. Can you believe that. Me and Mawgwe will probably go out this week fishing. I,ve had broncitus for 6 weeks now. Two dr. Visits. You can buy mealworms from Amazon, but I'm very fortunate that our corner convenience store carries them! Bronchitis is awful! I've had it twice and I thought I might die! Hola don Juan nice vid.Ilearn braid is no use in cold weather some time ago fishing for trout. I switch to flour coated or mono, at least they do not get all stiff and froze like braid does. Say hi to Ms Lulu please!

The bass are not to small and not to large for fillets for the recipe. Just the right size. i think if you veer from the recipe you will make the the black bean sauce still come out delicious. I like your quality control tape measure. A Taiwan coworker brought me some authentic fish sauce fermented for two years. It smelled like rotten mullet. I hope yours is better. Your fish and black bean sauce Turned out great. Ms Lulu's zingers are getting more and more clever. You need to study up on how to combat zingers. LOL

Hi Steve! I think any mild white fish would work with this recipe. We order it at the corner Chinese restaurant. It looks like they use tilapia in theirs. I was determined to find a recipe for it, and I did! It works! Yeah, that fish sauce is powerful stuff! A little goes a long way! LOL! Combat zingers! Yup! I need a book on them, even if only to be on guard against them! LOL! Thanks so much for looking in on us and for your kindness my friend!

Hi Tom! I put it through the fish's lower jaw. There are no blood vessels and it seems like no nerves there, so I figure it's much less irritating. Thanks for watching!

I need to find a way to adapt this recipe to make it vegetarian. Those veggies looked delicious. Ms. Lulu must have got a kick out of her punch line because it looked like it amused her. Try to stay warm up there. It is looking like it is going to be a long winter since we aren't even into winter and we are having such cold temperatures. Hugs to you both.

Hi April! My immediate thought is that you could change one item in this recipe and call it "tofu in black bean sauce." Really, the fish is so mild, it does in fact taste like tofu! Whenever I hold up our friends as examples of perfect marriages, Ms. Lulu seems to know the real story, and it's never so heavenly. 😁 Yup, the cold weather has put the kibosh on my fall fishing plans!
