SALSA ROMESCO CON BURNT LEEK😋 Romesco is a Catalan sauce and paired with sweet and soft leek it’s one of the best things I’ve ever made! 😮‍💨 RECIPE (4 servings, 60min prep time): -1 red pepper -4 tomatoes -a handful almonds or hazelnuts -3 cloves garlic Add some olive oil Roast at 200C/400F for 30mins (peel the hazelnuts if they have their skin on). Peel the peppers and tomatoes and everything to a blender. -1/3 cup (30g) breadcrumbs or toast -2 Tbsp red wine vinegar -salt and pepper to taste Start blending and gradually add -100ml olive oil. Store in the fridge up to 1 week (it’s also great with pasta). Burnt leek: -2 leeks Cut off the green end. Bake at 200C/400F for 40min (I baked them with the salsa ingredients but left it in the oven for longer). Remove the burnt skin and cut in chunks. -juice of 1/2 lemon -a good pinch of salt -1/2 Tbsp (cilantro) oil Toss and serve on the salsa Romesco. Garnish with hazelnuts and cilantro oil and enjoy with bread. - SALSA ROMESCO MIT LAUCH😋 Romesco ist eine katalanische Sauce und gepaart mit geröstetem Lauch ist das eines der besten Dinge, die ich je gemacht habe! 😮‍💨 REZEPT (4 Portionen, 60 Min. Zubereitungszeit): -1 rote Paprika -4 Tomaten -eine Handvoll Mandeln oder Haselnüsse -3 Knoblauchzehen Etwas Olivenöl hinzufügen Bei 200 °C 30 Minuten rösten(die Haselnüsse schälen, wenn sie noch eine Schale haben). Paprika und Tomaten schälen und alles in einen Mixer geben. -1/3 Tasse (30 g) Semmelbrösel oder Toast -2 EL Rotweinessig -Salz und Pfeffer nach Geschmack -100 ml Olivenöl. Zu einer cremigen Sauce pürieren. Im Kühlschrank bis zu 1 Woche lagern (passt auch super zu Pasta). Gebrannter Lauch: -2 Lauch Die grünen Ende abschneiden. 40 Minuten bei 200 °C backen (ich habe sie mit den Salsa-Zutaten gebacken, sie aber länger im Ofen gelassen). Die verbrannte äußere Lage entfernen und in Stücke schneiden. -Saft von 1/2 Zitrone -eine gute Prise Salz -1/2 EL (Koriander-)Öl Kurz vermischen und auf der Salsa Romesco servieren. I'm catalan. You pronuncied calçots right. Calçots are a tradition here. It's not something you prepare at home when you're alone, it's more of a familiar barbecue thing. By the way, we don't put calçots into the plate. We eat them like barbarians, using our hands. We take them off the skin, get them into the sauce, then we hold them into the air and put them into our mouth. It's the tradition. Taking the whole calçot out of the skin with a precision movement is an skill! If you want another plant-based traditional catalan meal, try escalivada! Ho has pronunciat correctament! Si vols provar un altre plat català tradicional de verdures, et recomano la escalivada.
