I have it too and I make all foods in it. Not just for Chinese food. I sear my filet mignon in it perfectly and finish it there. Then I make my vegetables while the meat rests. I love it. I Did use my John Boos mineral oil for the lid bc it’s recommended if you want it to last longer.

I really love it too. It makes wokking so smooth! I can finally wok successfully! I struggled with finding a decent work for years. I had a "non-stick" one from Ikea when I first started outfitting my kitchen as a teenager, and was still totally clueless, and its black coating started peeling up when I used it over high heat. It was so concerning and so gross. It was a total waste of money Then I bought a stainless steel one, thinking I'd avoid the mess of the layers peeling up. I still have it and it still looks flawless, but it's so heavy, I can barely lift it. Additionally, EVERYTHING sticks to it. It's a nightmare to use Now this channel has finally enabled me to buy a good wok. It's lightweight, strong, and non-stick every time. I'm so happy :) I've bought one for my friend also, who was running into the same issues I was. It's really hard to find a decent wok in local stores here - pan/pot producers just release items that are wok-shaped, but cannot function as a wok is intended to be used

The Wok she uses is a great Wok for most American Stoves. The Carbon Steel Wok that I use is a little more expensive and larger. Its heavier too. It is not a Flat Bottom like the one that she uses. The Wok that she recommends is a good Wok for the American Stoves. For me I use a Traditional Round Bottom Wok. I also had to Season it myself. The Wok that she recommends is Pre-Seasoned which is great and makes it easy for most Americans. Mandy does a great job teaching Americans how to cook Delicious Chinese Food. Both Mandarin and Cantonese Hong Kong style. I hope that she continues with her Videos for years to come and grow old together. 🍜🥟🥢

I love Chinese foods. And, just amaze how much sodium in the combination of oyster sauce, light and dark soy sauce, fermented bean curd are added in most recipes. These seasonings will definitely shoot the blood pressure of compromised people. Are there any magical tips to skip sodium and not lose the deliciousnes of of Chinese food?

I made a perfect fried rice last night I used 5 spice powder vegetarian oyster sauce instead of the real hoisin sauce light and dark soy also used some zucchini

One remark: If possible, always use leftover rice. It's not the same to cook rice a bit dryer than normal. If you cook rice and wait some hours, it will dry up from the outside and close some water in. When you fry that rice later, the water can't get out at once, it will first get steam, then the starch will brake open. Almost like in Popcorn, but of course in a much smaller scale. This gives the fried rice a special flavour. If you don't have leftover rice, prepare some normal rice, and put in into a stove on low temperature for about 30 minutes, so that the water can partly evaporate.

Been experimenting with this for a few years. If adding meat, when is the right time to throw it in? We like our chicken coated but it seems after I add it to hot, steaming rice, the coating dissolves. Am gluten sensitive so I just use corn starch to coat the chicken. Any tips from you or your viewers would be much appreciated.

You cook the chicken first so you get a nice sear on the chicken. Pull it and tent it. Then once you get that fried rice just right, you add it right at the end for 1-2 minutes and your coating shouldn't be removed since you basically locked that in in the beginning. You could also just add the chicken to the serving vs the wok. Then just individually mix it. Just make sure the chicken is fully cooked so 165°F/74°C internal temp. Hope this helps

Great tips! My favorite way to make fried rice is by first cooking chicken thigh pieces with kung pao seasonings. I cook that up so they're a bit charred, remove them from the heat, then work on the rest of the dish in the wok. I use onions or shallots, a lot of garlic, and the whites from the scallions I'm using. The only seasonings I use in the rice are light soy sauce, 5 spice powder, and some msg. Add the chicken when you're happy with the rice, add some frozen peas. When they're warm, add scallion greens and serve. I'll add some more scallion greens over my portion and if I'm in the mood I'll add a little oyster sauce or okonomiyaki sauce, and sometimes cilantro. Tasty! Edit: oh yeah, can't forget the egg! I very quickly scramble 2 eggs after I cook the chicken, then set it aside with the chicken until it's time to combine everything.
