Ah!... the drawing technique you are talking about for observation was called blind contour drawing...quite interesting to implement it for sculpture!

Is there a good resource for 3d anatomy models with different kinds of average bodies with their bone structures and fat distribution rather than perfect 10 females and action hero males?

It's honestly annoying it's always models with zero body fat. Idk where to look for an average joe nude model. It might be impossible finding an anatomy model with x-ray view of an average body. It might be beneficial anyway for like a medical standpoint to see what a regular person looks like with some belly fat. You might just need to use Google images of regular clothed people and do some observational sculpting.
