Good on you for showing this. I know a lot of people would love their own BBQ operation, but I think that too many people don't see the labor that goes into even just getting set up for the day. The early mornings, the critical importance of impeccable organization, the long hours, and then getting up the next day to do it all over again... It's the unromanticized aspect of any small business.

I use to work at The Catfish Hole in Fayetteville. We'd cater "cook onsite" for the Hoggs and Walmart shareholders meetings, among others. Most people really have no idea how much prep and backbreaking labor it takes to pull something like that off. Immediately after serving, its a mad dash to load it all back up and haul ass back to the restaurant to filter and clean. Often after an 18-20 hour day, we'd still hangout back by the dumpster for a while "unwinding"😉🥴 . Sometimes I really miss it and the crew. Good help is hard to find

@@omcorcthat’s true but u gotta think he’s paying to park the truck/trailer Paying for commissary Gas/time going back n forth Cleaning the truck at a commissary then bring it it back and paying for a “inspection” slip stating the vehicle was cleaned at a designated spot It all adds up
