This guy is really really impressive. The amount of energy and dedication to set up the stall, and then to continue with the cooking for and entertaining the customers. This is no joke - it takes a lot of effort and hard work to run this business. He has my utmost respect 🥰

He is not just a chef, or restaurant owner. He is a combination of many people: an engineer, an athlete, a designer, a technology expert, a chef, an artist , a fashion expert..., a lifestyle expert,
The fact you leave your equipment alone and nothing is missing tells me a lot about your culture!!❤❤❤❤

This is really hard work you must have the strength to move all the equipment & tools not only once but thrice(×2 including closing) just maneuvering the street with a cart that is full of heavy load which he build & designed by himself you have to give this man respect.

Looking at the surroundings, i trekked his daily hauling of his stall-kart. From the parking lot to his lot is roughly a distance of 350m. A normal stroll would take about 5min, but since he is encumbered and with the traffic it's gonna take probably much longer. Then i realized he does this not once, twice but 3x ..and this is just half of it. Essentially the distance daily is 350m x 6. No wonder his hands have the calluses!

That he could off load stuff twice & leave to get another load without having to worry about what might get disappeared as soon as his back was turned shows how big of a cultural difference there is between Japan & too much of the rest of the world.
