Wow! Just made this! Doubled the ingredientas for a whole chicken. First time, so i let chicken marinate overnight, and prepped the day before. A few slight adjustments, but nothing major. A little unsure while placing in dutch oven. Magical! A man from central Nebraska can cook Biryani! Keep-up the good work, Scott

I made this a few days ago and my husband and I thoroughly enjoyed it! He normally doesn't care for leftovers, but made zero complaints about these. This dish was delicious! I Love butter chicken that’s why your version of biryanis is the one I like except I put more rice at the bottom first less on top & I dilute safran in hot water extracting his colour not milk! Persian version of using safran!!👏👏👍👌

Yes you always always wash the rice 4-5 times so get rid of some of the cloudy water!

It helps to get rid of some excess starch! It makes the rice less gummy & mushy, and more fluffy.

Beautiful and amazing, Chetna! Yesterday was my birthday... and... Two years ago I was lucky enough to live for several months in the same hostel, in which there were British, Americans, Canadians, Germans and... Indians. Everyone remains in my memory, but the Indians still remain in my heart! A lot of time and different events have passed, but we write letters to each other every week. We were introduced and united by the kitchen. Every evening after work, we prepared dinner and treated each other, shared food and dined at the same table. I learned about basmati rice, Kerala spicy food, chicken biryani and sulji ke halwa. With each dish, I never ceased to admire the previously unknown tastes and aromas. I couldn’t imagine myself without Indian cuisine! I prepared some things from memory, others were sent to me on video. And then I saw your book "Tasty India". I decided to buy it, but not immediately, but later. Yesterday was my birthday... and my son gave me your book "Tasty India"! He gave me the best possible gift in the world! I was so glad and so happy that I decided to definitely write to you and thank you for your work - writing a book and running a wonderful channel about food on KZbin! If you cook on the hob then put the pan on top of another pan and then cook for 30 mins on really low heat, you can check my chicken biryani on how I cooked on the hob
