Today, we are featuring Taimeiken, a famous Japanese-style Western restaurant founded in 1931 in Nihonbashi, Tokyo. The restaurant has been loved by people for over 90 years. Chef Modegi, the third generation chef of Taimeiken showed us how to make a Chicken Macaroni Glatin (Casserole).
Ingredients (served for 2):
30g Long macaroni
250g Chicken thighs
1/2 Onions, finely sliced
4 Mushrooms, finely sliced
1 Bay leaf
30g Butter
30g Flour
2 cups Milk
2 Saffron
Salt, as needed
White pepper, as needed
Parmesan cheese, as needed
30g Maribo cheese
White wine, as needed
We are learning the secrets of Taimeiken's béchamel sauce, such as how to prevent flour from becoming lumpy and how to remove the smell of it.
