I like learning from you. Sharpening is conceptually easy, but really, really hard to do right. Those little details that you offer are worth the time. I use my knives, so they need sharpening, and I’m doing a much better job now thanks to you and Pete from Cedric and Ada. Fun time to be alive. Great video, glad you live the knife. It’s strange to see a pink knife in your hands🤣. You’re totally right about grit discrepancies between brands. I have noticed a similar issue when comparing different brands of sandpaper.

That’s a beauty. I have always like the Carter pattern. I actually have one of Carter’s apprentice Carter pattern necker in Super Blue steel. I will likely pickup a Calton version eventually, have a couple of his blades. He does nice work and like that he goes harder on the HRC on 1095.

Awesome video as always E. Kyle made me want some of the Shapton Kuromaku stones pretty bad. I have yet to purchase any because i am still learning to free hand properly. Your videos always help though. Thank you for sharing this and kudos to Josh for the amazing re-handles he did!

Most of the ceramic stones from Shapton are great, good removal rate and good feedback. In my opinion, the best ceramic whetstone is the Shapton Pro 1000. I mostly use diamond plates from Atoma up to 600 grit and then switch to the Shapton Pro 1000 and also have the 2000, which also has really good feedback. I use the 5000 for honing, but the feedback is not as good, the stone feels hard, like glass, but the stone does its job.

With the same grit, diamond is more aggressive than a ceramic stone. The removal rate is higher with diamond than with ceramic, but in my experience the grinding pattern of ceramic is finer, even with the same grit, if you look at the result with a magnifying glass.

… the sharpening stone wouldn’t be a sharpening stone without some sort of abrasive. I am pretty sure everyone knows that. Obviously , saying “the “stone” needs to be harder than the steel”, means the stone as a whole (a plate of abrasive material), needs to be harder than the steel. We are all aware of that- but thanks for watching and pointing out the obvious again!🥰🥰

Hahaha, strops the wrong way and in a weird S pattern as to cross hatch the initial scratch patern, thus compromising the edge tooth geometry.
