French 75 Cocktail with Cognac

For the French National Day (la Fête Nationale) I made a truly French 75 Cocktail - with cognac instead of gin. I used Delamain XO Vesper cognac and topped it up with Laurent-Perrier champagne. Can it get more French? Tell me in the comments.
Truly French 75:
• 45 ml (1 1/2 oz) Delamain XO Vesper
• 15 ml (1/2 oz) lemon juice
• Barspoon gomme syrup
• Top up Laurent-Perrier La Cuvée champagne

Thin strip ain't an easy one! Between Thanksgiving and Christmas, I do the gin version and swap the lemon juice + syrup for some cranberry syrup.

If you requested a French 75 at a bar, would you typically expect it to arrive with gin or cognac used? (Where I’m from most places will serve with a dry gin)
