This is my family's 140 year old french onion soup recipe: Get your biggest dutch oven and put all this in it: 2 pounds yellow onions caramelized for 3-4 hours enough butter to saute your onions just enough flour to thicken your soup beef broth enough to cover your onions with an inch to spare EXTRA DRY VERMOUTH (about 1/3 of a standard bottle TO START, but you will end up using 1/2 if not all of it)

Use a good quality or homemade vegetable stock and it will still taste great, albeit not as good as the beef stock. I’d caramelise the onions for longer than babish did though, his weren’t nearly dark enough. I’d usually cook the onions on a very low heat for 2 hours

Try not to cut yourself when slicing the onions, will reduce the amount of blood that ends up in the soup. You may want to try safety goggles to reduce your tear spillage as well.

Yoruichi Shihouin as someone who is not a fan of onions but loves french onion soup, caramelizing onions really takes the bite out of onions and makes them super yummy. And if it still isn’t your thing you can always load it up with cheese 😂

it is good at most restaurants but to get amazing look for small non chain steak houses, you will have to go to france to get better

I don't like them raw/barely cooked, but the flavor of a good french onion soup is amazing. When I was younger and couldn't handle the onion texture I'd basically get some and drink eat the cheesy part and drink the broth after, leaving a big pile of onions behind.

Thanks for the recipe! I just cooked it for my mom in mother's day and it was really good! I actually used whisky instead of liquor but it worked just fine, and i used grana padano and not gruyere. I don't know if the cheese was supposed to float like it did in the video (it looked like it did) but in mine the cheese sank and actually added a lot of flavor and cheesiness to the soup, a surprise, to be sure, but a welcome one. Thanks again!

Well, if you say it that way, onions originally came from somewhere around central Asia, parmesan is from Italy, and Grueyère originally came from Switzerland. C’est la vie, my friend. Anyhow, vive la France, for creating the great recipe. Oh, and of course vive Babish for the nice video.
