My beautiful FRENCH ONION SOUP is a French classic that is sure to impress. The meltingly tender onions, the delicious ooey-gooey cheese and the crusty bread is so hard to resist. Deep golden caramelized onions create a soup that is filled with amazing flavor, I’ve simmered it with fresh herbs, optional white wine and I used freshly grated Gruyère cheese, but you can substitute it with other favorites like Swiss cheese, Sharp cheddar, Fontina, Monterrey jack and others you may like. I love crusty bread, and a crusty baguette will always do the trick, but you can choose your favorite too. This soup can be intimidating for many, but I’ll show you how easy it is, and I’ll do it step by step. This FRENCH ONION SOUP wins hands down, I hope you give it a try.❤️
Ingredients __________________
4 medium yellow onions
2 Tbsp Olive oil
1 1/2 Tbsp butter
3 tsp sugar (i used raw, you can use regular)
1 tsp salt (you decide)
3 tsp All purpose flour
3 medium garlic cloves (finely minced)
About 1 1/2 C. Gruyere cheese
1/3 C. White wine (i used Pinot Grigio) you can can use any dry wine you like, or you can use beef stock or totally leave it out.
5 C. Beef stock or( beef or chicken broth)
3 sprigs of fresh thyme
1/2 tsp dried Thyme
1 Bay leaf
1/2 tsp pepper ( you decide)

I am a very confident cook and food writer, so I am super critical of these kinds of videos. But Rachel - You. Nailed. It. Simple, but thorough explanations of everything you're doing and why. My son LOVES French Onion Soup. For his birthday, I promised that we would spend an afternoon together making it from scratch. I'm going to show him this video first, so he knows what's coming.

Rachel, I married an Hispanic man 22 years ago and I love cooking for him. I was taught how to cook American food as a teenager so I have always tried to learn how to make traditional Mexican dishes for him like his mom made him. I’ve followed several of your recipes and all have turned out delicious ! I’m making this French onion soup as I type this and we can’t wait for dinner ! Thank you for sharing your recipes with us ❤

I know watching her and the dishes she makes reminds me of when I used to live in CA 30 yrs. ago. When CA was a lot different than today! My brother-in-law was a fantastic cook! We ate totally differently here on the Southeast coast. And she captures both types of cooking. My brother-in-law is from Israel so he had great recipes, and then there was a lot of authentic and Street Mexican food. Not what they had here in the south 30yrs. ago! Taco Bell was the Mexican food here then! But life was easier and food was more healthy for you in Ca. back then. And you could grill out like normal people! She reminds me of people who get together with other people and grill out and hang out outside after dinner. Not like it is today. I don't know if you understand what I'm talking about. They are not allowed to grill out in CA anymore. Along with some other insane things! I'm so grateful we moved straight to the other coast when we did!! And I found her on KZbin!

I watch many cooking videos each week and really appreciate your style above most others. A person with no cooking skills could watch only your videos and they would become an excellent chef if they pay attention. This is because you don't skip over key details and you explain why you approach things the way you do, at a calm pace and yet with no time wasted. Can’t wait to make this for my 98 year old dad. He loves soup. Onion and loaded potato are some of his favorites. As their caregiver I make a lot of soups at home. Store bought are to heavy with salt. Thank you for this recipe. I love watching you. Your so calm. Happy new year Rachel.

I'm a french Canadian. I regularly make the French onion soup (at least once a month). It's a classic at home. Rachel recipe is basically the same that I cooked for over 20 years. I use the same seasonings (bay leaf, thyme, salt and pepper). It's easy to adapt the recipe according to what you have at home. The crucial step is to caramelize the onions well. It makes a big difference in taste. As variations: 1) I sometimes replace the white wine with beer (any type works but I prefer a good amber ale...when making soup with beer I sometimes add 1/2 tsp Dijon mustard but I reduce to 1/2 tsp thyme 2) You can also have fun mixing red, yellow and white onions. I take what I have at home. It's a matter of taste but I always make the soup with beef broth. I recommand it. I like to use cheddar (old cheddar chesse is the best if you don't have gruyere)

Having French heritage, my mom used to make this all the time and I do as well. Really spot on recipe. For those comfortable cooking with alcohol, I'd suggest a dash of cognac at the end. It adds depth and distinctive flavor.

You're right on the money on this one. I use a good quality cognac as well as white wine in equal amounts in the "beginning" as to evaporate the alcohol, and I find that combo to be the best!

To avoid onions that will make your eyes water when you cut them do this: put whole onion in microwave for about 10-20 seconds. The small onion needs 10 sec. and a I larger one for 20 sec. It will be easier to peel and one won’t get the harsh odor and eye sting. If one still gets the burn, add a few more seconds to the next onion. Easy fix. Don’t do several onions at once. You can do 2 at a time, but 1 works best. I forget where learned this trick but it works. I love onions but admit I’ve never had French onion soup. Will definitely make. When I was a young bride, we had a big group of friends unexpectedly drop in, and I had not done my groceries.... but ....I did have bread, cheese and a big bag of onions! So yes, made a huge pot of home made French onion soup. It was a massive hit! The guests loved it - said it was the best they ever had -and it was soooo easy to prepare. I made it just as you showed. I really like your idea of cutting the bread in croutons because your correct, with the whole slice, the first bite can be difficult to dig out. I adore French onion soup!! I can eat it every day without getting tired of it. Thank you for another great recipe!!

Co-inky-dink! I just made a pot of Fr. Onion Soup TODAY! (it was overcast & drizzly here in Laguna CA... soup weather) I use Julia Child's recipe with some homemade beef/chicken stock I keep in the freezer. I add 2 cloves of garlic just because I like it....I see you do the same. For the wine I use dry French Vermouth and then some brandy at the end. Gruyerè cheese if I'm feeling flush, otherwise just Trader Joe's Swiss slices. And always TJ's Pecorino...just because I like the tang of sheep's milk cheese. A salad & glass of vino & good 2 go!❤

We take the end of the season pickles, peppers ,baby tomatoes, I add some garlic cloves, some spices. Top with a vinegar brine. I jar as many as I can. This is so good on the side with this soup. I use different herbs in my jars for flavor. I just love homemade cucumbers. We just spent the last few days clearing out the garden of what was left. We do chow chow too. Very delicious.🙂👍✌️🥰🤗👋. Oh my goodness my sweet friend, you must have been thinking about Johnny when you decided to post this. This is his absolute favorite soup and anytime he finds it on the menu at a restaurant that's what he'll order. A truly easy recipe and I'm excited to make this for him. Oh boy! I love French Onion Soup! I have always been afraid of making it. I would eat this soup in restaurants and in my mind I would think that to make this soup would take a very long time! It’s really worth the time caramelizing the onions. I love the developing flavor and your recipe looks delicious. The next time I make it I will do what a friend did and that is add in pearl onions (frozen variety) in the latter part of the cooking process. Just for fun and added interest!

What a perfect soup for the Autumn months that are upon us! Especially here in Ohio where it is already cold! This looks delicious and so full of flavor! This recipe is almost identical to my French onion soup. The only difference is I don't add garlic to mine. I'm so glad you used Gruyere and not Swiss cheese like so many other videos I've seen. It's not quite soup weather for me; we're still in the 90's here in Las Vegas, but as soon as it gets cooler it will definitely be time for this wonderful soup!
