I made Laura's French Onion Soup one year for Thanksgiving, and it was so rich and beautiful that I'm ready to try it again. The Gruyere is definitely worth buying for the croutons! I definitely recommend this recipe, you'll LOVE it!

Mrs Laura, nice recipe, very close to my wife's recipe, although i do most of the cooking this one is all hers. We use vidalia onions, no sugar, they carmelize sweet, lea & perrin worstcheshire sauce with beef stock & 2 dry bay leaves while simmering, we use provolone, but gruyere is my fave cheese, folks, please remove the bay leaves before serving.

I love French Onion soup. It's interesting to see the evolution of your video's. In your 2012 version for French Onion soup, you said not to use Gruyere cheese as it would over power the onion flavour but now you say gruyere is the best cheese to use. I've used both Gruyere and sharp cheddar but definitely prefer using Gruyere as the flavour is great. Thanks for a great video as always.

My wife an I love this, We grow a lot of onions for the year. and make a batch to last us thru the year "Canned" We make Chicken Stew, Vegetable ham, Chicken soup and French onion, all canned in pints. Very Very Comforting to know you have have good soup on a cold winters day!! P.S. We make our French onion the same way!!

Love your recipes.. just a note.. It's called "French Onion" because of the " French" cutting technique on the onion where you cut it lengthwise with the grain and not slice it across the grain. Slicing across the grain cuts through all the moisture cells and tends to make the onion stringy

You have two variations on Onion Soup. This one and one from 8 years ago. You liked cheddar cheese back then and used white sugar instead of brown sugar. You also cut the bread into cubes 8 years ago. Just wondering if this is a variation or you decided you like this way better. Also, you cooked the onions for ½ hour varying from med low to med high.. Here you did straight medium for 45 minutes. Love your videos. I’m going to make both and see which I like best. ! Thank you !

Hahah 4:08 let’s talk bread which you could argue is the best part of the whole thing ahahaha so italian. The soup really shines tho. Caramelized the onions much longer for a deeper color of brown and it’s soooo good. Takes time, watch it too. If you’re not looking you’re not cooking.

Was recent;y thinking of making this and there you are. When I was working in a restaurant kitchen, we topped with Swiss cheese which is like poor man's Gruyere. A touch of brandy went in with the wine as well. For big flavor, roast beef bones and make homemade stock. French recipes, use vegetable stock. A dash of red wine vinegar makes it pop and offsets the sweet. Y U M !!!! (oh yeh, fancy restaurants in Beverly Hills, California, -- like Spago back in the day -- served small scissors with it for cutting the gooey cheese so it didn't string out all over and ruin your new outfit bought on Rodeo Drive -- LOL ).

When you keep adding water to the onions you stop them from reaching high enough temperatures to properly enter the maillard reactions and develop great deep onion aromas.
