Hello, hopefully all is well. Great tutorial. I have a question about the rennet, with the other cheese recipes including feta they call for a 1/2 tsp of single rennet which works out to 1/4 tsp per gallon. I see you are using 1-1/2 tsp of rennet, is there a reason for the increase with regards to your recipe? I see you didn't add Lipase? Thank you.

@@Najeeb706 All is well and thank you. So I find with store bought milk I need more rennet, if you ja e fresh raw milk the lowre amount would work fine. As fo the lipase I do have some but really don't like the taste of the final cheese with it in.

If I wanted to add dried herbs to the feta cheese, when would I add them to the cheese mixture? Thinking of dried roasted tomatoes, basil and oregano .

Did you want it to be part of the cheese, I put mine in oil after I make it and I add these things in.

Greek here, it is important that the milk is either from a goat or a sheep. If its from a cow, then what you are making is not feta.

We don't all have access to goat or sheep milk, this may not be authentic but it tastes just like feta. Oh and thank you so much for your helpful comment, I'm sure you feel better about yourself now.
