About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Are they farmed or wild? I have dug them up at the mouth of the Elkhorn Slough in Moss Landing, At low tide when I walked onto the sand bar they squirted water into the air and gave away their location.

Worked on a geoduck farm for a summer in highschool. Interesting stuff; they grow in PVC tubes in the muck where the tide comes in in Puget Sound. They take like 10+ years to reach maturity, so the business is kind of similar to another Pacific Northwest classic, the Christmas tree farm! It's the same as waiting 10+ years for a Christmas tree to grow before you can cash in! And yes, pronounced GOOEY-duck.

I am from Vancouver, BC. Geoduck is actually pronounced GOOEY-DUCK and it is native to BC, the Pacific Northwest. It used to be very inexpensive in the 70s and 80s before the world discovered it. It has a nice sweet crispy texture fulled of umami. Definitely try it if you can find it. :)

The reason the neck is wrinkled and really think is that these guys live 5 to 6 feet below the surface of the sand. They stick their nose just above the surface to pull in nutrients at high tide. When you walk along the beach and step near one, they pull their neck back sending a fountain of sea water into the air. If you are in the wrong spot you may get the up spray or the down spray drench. There is another big clam in the Pacific northwest that is 1/2 or 1/3 the size called the horse clam. More common than the geoduck. I don't know if they are as sweet raw, but definitely would be great as tempura. Could even be pounded out like abalone steaks.

Just curious. Since some of you are from the Oregon/Washington area, what’s the price of gooey duck up there? $40/lb seems steep but they are all the way on the opposite end of the US in Florida from where these are sourced.

Judi McRae yes, there use to be an abundance of geoduck in the Portland/Seattle area. Now it costs an arm and a leg, mainly because the majority Geoduck is sent to China.

Yeah, thank you for the correct pronunciation. I wanted to say something, but was busy with how dang hard it is to get one. Horse clams are much easier. Fresno, CA. Horsehead Bay rocks, grew up in Portownsend when there was only one flashing red light. And no one knew what a Victorian house was, we just lived in them.
