About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Beautiful! Another lobster fact: We all consider lobster to be an expensive treat, but back in the 1700s/1800s it was a main staple given to slaves for food -- so often (almost every day) , in fact, that they started complaining about it. It's amazing how things change with time.

I'll bet. I can just imagine the shipping costs! I'm lucky I live near the ocean and most of the clams and lobsters and oysters are grown or harvested right near my house. salmon and shrimp though come from as far away as Chile and Norway or Asia because our fishing industry overfished the local waters. Atlantic Tuna is another overfished species so that's really expensive as well. I don't buy tuna anymore because it's full of mercury. I do buy mackeral or sardines which tuna eat and they taste just like tuna without 60 years of mercury buildup! My shoprite has live lobsters but they sell cooked ones as well. Unfortunately, they overcook them so the meat is tough and rubbery!

sk8rdad Mackerel does not taste like tuna. Not at all. Mackerel is a fatty fish, while tuna is a lean fish.

After watching Master Hiro, local Japanese restaurant missed on Hamachi Kama ... bones left in and ponzu was flat. The collar meat was good enough , Master Hiro is a pleasure watching his handling of products ... his hamachi was bloodless and boneless . 🙏🏻 I think Japan is one of the most excellent handlers of high end product . Wagu , Kobe steak ( I had in Okinawa ) seafood. It’s a honor to see it being treasured .

That looks incredible. For one bite, I think $10 is a good price. I know in my local Asian supermarket, they have live lobsters and they also sell fully cooked whole lobsters. I hope you and your camera man have a good afternoon and a great week, Chef Hiro.

Whenever I watch cooking videos of people having to use live animals,I do admire and like seeing them dispatching of them with respect and dignity rather than stuffing them into a pot of boiling water or something like that and letting them die painfully and slowly. People forget that animals are living creatures too and we should never devalue their worth just for the sake of feeding ourselves. Kudos to you my good sirs :)

Thats how dreams mostly work. Everything you see in the video is visual so a dream will let you be there visually but the connection between the visuals and the taste are missing. The other possibility would have been you putting it into your mouth and instantly waking up in shock because your brain tried something that isnt in your brain... If you were at his restaurant once, you could probably dream the same thing but with the whole eating experience. If you would often go somewhere else to eat sushi it could also have mixed the two up but that requires you thinking of the channel while eating there or thinking of your local restaurant while watching the channel. At least thats my own experience well analysed...

I like Crab a lot more than lobster, crab is much sweeter and has more flavor in my opinion. But that roll does look really good. And it's huge. lol. Thanks for the video Hiro!

Yes, I agree.. they're tied for me... it's what I'm feeling.. sometimes I just want that lobster flavor, and tougher (not rubber tough, badly cooked lobster, just compared to crab) texture.. sometimes I want the softer, sweeter crab taste... depends.

Hiro, i love your videos so much, i wish so very much that i had a culinary touch and i wish i could prepare and have available things for sushi where i live...having said all of that, atleast for the next few days i will have to stop watching your videos as i'm in the hospital and not allowed to eat right now and won't be able to eat whole foods for atleast another 4 or 5 weeks and your meals make me so hungry i'm just torturing myself lol, so i will see you again my friend! lol

I usually eat it and it’s alright. Not better or worse than the rest of the meat. Just hard to get out and not too much of it. Kind of have to squish it out of the legs. But you’re right, might as well get more bang for your buck!
