My mom’s salsa is the best,and she came up with creamy,cheesy,salsa grits,and they are really good especially with a good western omelet,so figured combining them with you fried version,would be even better. Also we are going to try selling them with pork tacos and breakfast burritos.

We used to do about the same thing with cornmeal. Most people call it polenta, but we always called it "mush" But it was the same principle, you had to put it in the fridge until it set. Then you slice it and fry it in a skillet. We always had ours for breakfast with butter and syrup. I love grits. I am going to give this recipe a try. I just love your accent! My Grandmother used to make cheese grits with shrimp in the late fifties. She never breaded them just fried them crispy, and her sauce was just bay shrimp sauteed in butter beside them. In Ocean Beach in San Diego there is a restaurant that makes them just like my Grandmother's, and then they cover them in a blinding hot, hot sauce! This sauce looks muuuuch more pleasant. P,S. The accent is like a breath pf home. :-)

I can't wait to trying this tomorrow. I have seen several recipes for fried grits, but this one by far looks the best. If I would change one thing, that would be to add the cream before the cheese. I believe the cheese would incorporate better to make the sauce. Again, I do yield to this cooks design. Thanks

+Lin Bowden Thanks, Lin. No, to me their not like oatmeal, but that's me. They can be smooth and creamy, or even have like a cornmeal texture. You should be able to find them easy in TN. Let me know if you do. I like cheese grits the best with lots of butter.

Grits, or their full name-hominy grits, are ground hominy, which is corn kernels that have been soaked in an alkaline solution. It's washed and dried and then ground. Grits and hominy have been in the Americas since humans began harvesting maize. 😊

A note on your Butter Sauce; Add 1 tablespoon of corn starch as your final ingredient and stir it until blended and it will prevent you sauce from separating.
