A good tip is to substitute half duck fat w/ a neutral oil to add extra richness to the sauce. A guy I worked with would do semi regular hot chicken pop ups and this was his technique.

As a European, if it is a burger or not depends on the bun. If there is a piece chicken in between two burger buns, then it‘s a chicken burger. There is no reason to call Popeye‘s chicken burger a „chicken sandwich“.

Regular fried chicken needs seasoning, but if you're going to drench it in sauces, you don't need to season it. the sauce will cover up the seasoning taste regardless. so there is no point for seasoning.
