The formula of a pizza (“sauce, dough and cheese”) is sacred to old-school Brooklyn pizzaiolos like Lucali owner Mark Iacono. But renowned pizza enthusiast Scott Weiner believes that the beauty of the slice comes from its creative customizability; whether it’s a pizza made topped with tacos, gold, or re-constructed entirely from a bowl of ramen noodles. So with these franken-pizzas emerging fast onto the classic NYC scene, it’s Scott’s mission to deliver Mark a novel slice that will challenge his notions and spark the debate: what REALLY makes, or breaks, the definition of a “pizza”?
The best things in life are… fried? Roberto from Keste is bringing an Italian specialty, pizza dough fried, THEN topped, to Scott’s table. Mark likes his pizzas baked in an oven “500 degrees across the board”. But after trying it, Scott thinks the definition of a pizza may extend to include those with a fried crust. Does it “Really, Dough?!” Scott brings a couple pies to Lucali to get the final word from Mark, the resident pizza purist.

Thrillist you’re very rude, who touches employees backs, acts so condescending and disrespectful to a very kind chef, but the thing that really bothers me is that he actually tried to show and talk about his pizza, then you edit the video and just ruin it all. Haha Jesus this comment section hates you thrillist. Glad you kept the basic parts of the show, despite the hate. Poor Scott must have been distraught after this came out. The show is excellent and could run for quite a while, but I would suggest a season where they travel trying regional styles, and definitely a start from scratch, how to make marks pizza. Maybe run his creation story in reverse and travel to Italy to shoot the farming and shit. Dammit I'm too drunk to keep trying to make sense. Thanks for the show, please work out some way I can sub to it without having to get notifications for all of your other shows. Thanks

Luna Frank Pinello should have been the one person doing this interview, I can’t watch this guy. And editing this segment was pointless and TOO distracting... Definitely cringe worthy watching it, and he comes off as an awkward rude guy. Pick and choose one, but don’t be both.

I felt bad for the chef. You can tell he was nervous about the interview and became visibly upset when the host cut him off. I kind of want to call the chef and ask him what he was going to say before the asshole interrupted him.

Mark is so much cooler than this host hahah; Scott needs to chill out. I've seen these crews in kitchens before: they come in with this over-enthusiastic, inauthentic approach that soils the resto vibe. This scripted, corny attitude rubs you the wrong way after working long shifts in blistering heat. It just comes off fake. You get burned, cut, stressed, tired, yelled at, entitled customers, health inspectors, bad reviews - and then Mr. Chipper waltzes in with the zingers. After the service industry this kinda shit's a joke. These are seriously hardworking guys who love food - that’s it. I bet this guy's like fuck why did I sign up for this. (Munchies and Bon Appetit do a pretty great job at preserving that vibe) Of course this show would be called #reallydough. Jesus.

Imperator i’m from italy and i can tell you for sure that a well made naples pizza has no rivals, and anyone from naples is arrogant about their pizza, they are just the best. I know marks pizza is good for sure, because when i make pizza at home my recipe is similar to his, but normal new york pizza is not even close to an italian pizza.

I started to like this , but when he told the chef “you’re not from Naples” , my reaction was like 🤭 . He still gave you the food , still respect you and wanted to changed the food for if you didn’t like it . Respect for the chef . What Mark makes is defintely not a Neapolitan pizza, which has to be puffier and only lightly crunchy. His pizza is actually more similar to the Roman style pizza, very thin and very crunchy.

Fried pizza is definitely pizza, and even though with "pizza fritta" we usually refer to a fried calzone, we have many different kinds of pizza, the most common of which are fried calzone, fried montanara (there's also oven montanara, which isn't fried at all) and battilocchio (which originally means plain fried dough with no toppings or filling, but can sometimes be used to refer to all kinds of fried pizza in general).

The fried pizza is all another thing (very traditional in the center of Naples, also served as a street food) and is actually folded like a calzone or a big panzerotto and is stuffed, not covered. Montanara is different from what you've got here, is smaller than a pizza, almost like a lightly squeezed ball but still very puffy, is not finished in the oven, only fried, and is served with some cold crushed tomato sauce, some grated cheese (like parmigiano or pecorino) and some basil. There is usually no mozzarella or fiordilatte on top. This type of pizza is also served in Naples, but is neither a traditional montanara nor a traditional fried pizza, still very good though (maybe my favourite, actually). What Mark makes is defintely not a Neapolitan pizza, which has to be puffier and only lightly crunchy. His pizza is actually more similar to the Roman style pizza, very thin and very crunchy.

I just can’t get how people call him disrespectful and arrogant. Lmao. He would’ve disrespected the chef for not tasting the pizza at the right time and temperature if he had let him talk. It wasn’t the best way for him to say to the chef but he said it playfully which makes me wonder how people could see it as disrespectful? In the best case scenario, he could’ve said “Do you mind if I bite on it (pizza) while you’re sharing your story cuz I really don’t wanna miss out the best moment of your masterpiece.”
