Actually going to a carniceria. Package brands bought at the store contain more fat.

It looks like it might be the Johnsonville brand, the yellow container looks familiar. I've had their chorizo and I happen to like it better than traditional chorizo. Like you said, it's more meaty and not greasy. Where I live, it's hard to find, so when I see it, I buy several packages. 😊👍
