I made these last night and they were delicious ! I shared your recipe with the food groups I’m a member of. I did give your channel all the credit for the recipe. I usually fill my taquitos with canned corn beef , so this was new to me. The sauce was fantastic and I’m looking forward to the leftovers!

Great idea Potato taquitos. We always eat them like finger food and use dipping sauce. This should go well with sauces used for chips.

I fell in love with cojita cheese. Started with elote and then I went nuts with it. I found it is a pretty fantastic substitute for parm regg if you can't afford the real parm and or are just out of it. I love the tang to it. The fresh works better when I've used it for pastas. My Italian friends would die if they heard me say this. 😅

@@VillaCocina you're not joking. I've made lemon pasta with it. Used in rice. I've used it in breadcrumbs in fried and baked chicken. I used it in pasta salad. I feel it's a very under utilized cheese and under realized. I was surprised when I looked to find pretty much nothing but elote and tacos.

Its a thickened cream, Its flavor is between sour cream and creme fraiche. Really good balance. There is different consistencies, One that is not too thick works well because you can drizzle it.

I add serranos to my liking. To me this salsa was perfect as far as spicy. You can make the salsa without the serrano or use jalapeño which is mild and you can remove the veins.
