The thing is Joey never actually cared about Kathy. He could've found any other girl at the drop of a hat. It's the fact that Chandler did something he would have never expected that really hurt him. Joey trusted Chandler and thought of him as his best friend, and for Chandler not to feel the same way about him (in his eyes) was a real punch in the gut.
