Hey Amalia, thank you for the kind words. At one point I was nearly overwhelmed as you probably saw - ironically I also needed to wipe away the rain from my eye at that point. The timing of the typhoon made it tremendously atmospheric. PS I've just arrived in Moalboal and did the sardine run today - up early in the morning for canyoneering which I'll be recording too (my wifi is really patchy here but will try and upload my usual stories to IG if you have me on there)

Chicken inasal is marinated in coconut vinegar, lemongrass, ginger, and muscovado sugar; then basted in oil with annato seeds and garlic. The chicken oil is usually mixed with the rice. While the soy sauce, calamansi and chillies are mixed together and serve as dipping sauce for the chicken.

Sure thing, I'm thinking that I may do that when I begin to revisit some of the places that have resonated with me. Definitely on the cards for a few weeks in Eastern Europe after Christmas/Asia to savour a proper winter before heading off to the southern hemisphere again

Your in Bonifacio Global City (BGC) you should study Andres Bonifacio history, stuff they don't teach in Europe add Gomez, Burgos & Zamora as well streets name you see in BGC unlikely to be known in Europe as well. Real Local Philippines History not by foreigner or book publish outside, will give you a better view of how it really was 👌👍😎✌.

I literally flew to the other side of the world to experience it first hand for myself… I’m not sure I had time for more strands of history given that I only had the day to focus on this particular chapter. There’s always more, and a reason to perhaps return some day! Great adventures in Manila
