I have been watching y’all since the very last year y’all were in the basement and I still love every video. I did go back and watch all the videos up to the last year in the basement and not a day goes by that when I see the notification that y’all put up a new video I still get excited to watch. CHOCOLATE GRATING TIP!! If you dont do this already, put the grater flat on the table and grate towards yourself. Much easier on the arms and shoulders and you get more pull. If you're worried about the face down grater scratching your stainless steel, put a cloth or a cutting board down. Hope it helps!

Brittle is delish… I think I am a traditionalist and like peanut the best… we would make small home batches with my dad at Christmas when we were growing up :). My adult daughter loved the box of turtles and I ate part of a big turtle…mmmm. Haven’t tried the other candies yet bc they are for Easter.

Why do you use corn starch for the molds rather than flour or powdered sugar?

I'd be willing to bet that it's because cornstarch is the least hygroscopic of all the food-grade starches, meaning it doesn't absorb moisture from the atmosphere and won't get sticky/clumpy like sugar and flour can. Sugar is particularly hygroscopic, so even though it's a logical contender flavor-wise, it would make the outsides of the candy tacky and difficult to coat.

Probably not much of a taste difference because corn starxh doesn't have much flavor to begin with. And there would have room really be a lot for the chocolate to not cover it

It's very hot liquid and if u pour it fast it may splash onto someone and cause a very bad burn and it's a waste of syrup if its spilled.

As a candy maker it's still odd to see tapioca added bare handed rather than just pouring it or using spatula for assistance. Just a table higher than the pot, bucket does have a yellow pour assist. You get a good rhythm and make alot.
