Considering the late 1990's and early 2000's were when RTS games were at their most popular, it's unsurprising that we got a lot of experimental titles in the genre. Unfortunately, they could be hit or miss in quality, so I can't say I'm surprised that Thousand Land turned out to be a mixed bag. Still, it's cool to see some history for an older FromSoftware game that isn't part of a franchise or a precursor to Dark Souls.

Ethnic is a pretty standard term in music lingo. Usually refers to instruments that are outside the standard European orchestral instruments and electric instruments. This can include anything between drums as well as vocals, and is by no means limitted to African instruments. In fact one of rhe most popular examples is actually The Mystery of Bulgarian Voices, which, as you can exam, is from Bulgaria. The term's use in the music world basically transcended the origin it came from.
