Everything looks so good! I used to make an Anglo version of your soup, I guess you'd call it. I used leftover pintos from supper, and blended them with canned Ro*Tel (I don't like real spicy foods, so Ro*Tel Original was hot enough for me.) I never added eggs, but I would pour it over crumbled cornbread, and put cheese on top. It was a way to get one more meal out of the last little bit of beans. Seeing you make the soup with eggs has me wanting to make my version again. I need to cook some beans!
