Ingredients
Whole wheat flour - 1 cup
Salt - a pinch
Baking soda - 1/4 teaspoon
Fresh curd (room temperature) - 3 tablespoons or as required
Oil - as required
Water (room temperature) - as required
Kalongi/ Nigella seeds/ onion seeds - as required
Coriander leaves - finely chopped as required
Ghee/ clarified butter - as required
Instructions
Take a bowl and add whole wheat flour, salt, baking soda, and mix it properly.
Now, prepare a medium to a soft dough by adding curd little by little.
Sprinkle some oil and knead it gently.
Further, cover it with the muslin cloth or kitchen towel and allow it to rest for 30 minutes.
Take a small portion of the dough and dust it with the whole wheat flour.
Using the rolling pin flatten the dough into the round shape on a rolling board. Keep it thick.
Now, brush with water on the top side and sprinkle kalonji and press it gently.
Sprinkle some coriander leaves and press it gently.
Further, heat a pan and place the kulcha. Make sure, topped kalonji side should remain on the top. Keep the flame medium to high.
After, a few minutes, flip the kulcha gently and apply ghee on it.
Flip it again and again until it cooks properly and evenly.
