Recipe/Recept ↓ *Carnivore buns (bread rolls)* 2 large eggs (or 4 very small eggs) 1 1/2 cups milk powder (ca 140 g) 1 tbsp baking powder (ca 13 g) 1. Whisk the eggs and add the baking powder. 2. Gradually add the powdered milk and mix with a spatula until you get a sticky batter. 3. Fill a bowl with water (you’ll need it!) and wet your hands and a spoon. Shape the batter into about 6 small, round buns. If it gets too sticky, wet your hands again. 4. Place them on baking paper and bake for about 11-13 minutes at 350°F. 5. Let them cool and enjoy these delicious carnivore rolls! *Tips* - If the batter is so sticky that you can’t shape it into balls, even after wetting your hands, add a bit more powdered milk! - Don’t skimp on the baking powder. If you do, the rolls will collapse ////////////////////////////////////////////////// *Carnivore frallor* 2 stora ägg (eller 4 väldigt små ägg) 140 g mjölkpulver 1 msk bakpulver (ca 13 g) 1. Vispa äggen och tillsätt bakpulvret. 2. Tillsätt mjölkpulvret lite i taget och blanda med en spatel tills du får en kletig smet. 3. Fyll en skål med vatten (den kommer du behöva!) och blöt händerna samt en sked. Forma smeten till cirka 6 små, runda bullar. Om det blir för kladdigt, blöt händerna igen. 4. Lägg upp på bakplåtspapper och grädda ca 11-13 min på 175 grader. 5. I am thrilled! I can't even remember how many panko or egg based 'breads' I've tried that went straight into the garbage. Only called bread because it's shaped like bread and looks like it could be bread. These buns taste like a bread! Not a yeasty and fluffy bread but...they do the trick! I had one with a hot dog today and I can't wait to try it with a burger! This is the first time someone has called something a bread(bun) and not been fibbing. Thank you! Sure , can't be everyday because of carbs but it makes the perfect cheat!!

Me too I got thoroughly sick of pork rinds on keto And I have loved them my whole life A couple yrs ago I went back to no scavengers (pork & shellfish) and do not miss it at all this time; and no turkey ham & bacon nor vegan subs. Not even chicken sausage. It never tasted good. (Smoked turkey legs do taste like ham to me so few times a yr I’ll get one and cook cabbage with it for “ham & cabbage”, a childhood meal for me, altho I don’t have the mashed potatoes w/it!) But the rest of it, I do not enjoy sausage even anymore. We won’t speak of pepperoni 😢 (but pizza is impossible on carni so it’s ok) We gotta stop powdering our foods into “tricks” we can get that dopamine hit with. Powdered chicken skins incl. I love fried chicken skins, even turkey skin but it’s a not often thing.

I just made these and they were pretty good. They puffed up and browned nicely. I put too much milk powder in mine and they were dry when they cooled off. I will make them again but watch the amount of milk powder. Maybe that will help the dryness. They taste good. Could use as a Bun or Biscuit. They were a little eggy when hot but not like other recipes. When cool the eggy flavor lessens. Idk y but they taste just like the waffles my mom would make us as a kid. I like them. It took 5 min to throw together and its way easier then some other recipes. Definitely worth A try.

Oh wow that was quick 😀So glad you liked them! About the batter: don't worry if it seems impossibly sticky, as long as you wet your hands a lot it is okay! (less is better for the milk powder) I can also warmly recommend brushing some melted butter on top of the hot buns, adds a nice taste.

Please Note: These may be good for gluten-free cooking, but Milk powder has waaay too many carbs. This will very likely throw you out of ketosis if you eat more than one roll.

Wow! I just looked up the nutritional value…average carbs for 1 cup of powered milk is 49g/sugar 49g…that makes sense, cause when you dehydrate fruit, that process makes the sugar more concentrated…without the water and fiber😱

@BeefBossSweden ....great effort, but aside from the lactose (milk sugar), did you know baking powder is one fourth cornstarch? Sometimes more depending on the brand. Cornstarch has a glycemic index equivalent to glucose.

OMG!!! These turned out amazing! Thank you so much for posting this video. Me and my husband are carnivores and of course don't get to eat bread, but this has opened the door to having bread like buns. I have tried so many variations of protein powders, but would have never thought to just put milk powder and eggs together, genius! Have you tried putting things like butter extract or any other flavor additions? I'm so curious now. I have pretty good cooking/baking knowledge and tend to over think things. Hence the simplicity blew me away when they turned out :) Again thank you, thank you!!!!

THat was my first reaction when I made them! :-)) So glad you guys enjoyed. I have tried brushing some melted butter on them when they're out of the oven (which was nice). But nothing like butter extract! (my non-carnivore family added saffron and made saffron bread one time, also sprinkled with sesame)

I just made these buns. One bun I shaped into a hot dog bun; I just bought a pack of Hebrew National hot dogs yesterday. The buns are delicious--just like real bread. I had two bags of dry milk powder in my cupboard that needed to be used. I'll make these again soon. Thank you.

Pretty amazing, I made half a batch to try. I used Nido whole milk powder, which does contain soy lecithin. Other than being a bit too brown on the bottom, they were very good! I would not have guessed they were made with milk powder if I hadn’t made them!

I just made these using non-fat milk powder and they came out great. They taste like Pillsbury crescent rolls! Right out of the oven they are awesome but they may be dry after cooling off like another commenter mentioned. Maybe whole milk powder wouldn’t be as dry. I have some butter powder so maybe I’ll try adding some of that the next batch to see if that retains some moisture.

would be interesting to see if adding yeast to the mix and using baking soda and cream of tartar then allowing it to proof after forming into balls would eliminate most of the sugars and carbs

What is the crust like on these? These look like a good candidate for a low carb carnivore bagel, and to lower carbs further I'm considering using a thin layer of this "dough" between a more common beaten egg white filling to make the "body" of the bagel/bread. Do you think the dough would be too heavy/not worth it texturally?

There is definitely a bit of a crust, but it is not very hard or crispy. You can definitely make this in a bagel shape as well :-) Interesting idea about combining with beaten egg white bread. This dough is super heavy though, so keep that in mind. Beaten egg whites are also quite sensitive to fat (and tend to loose their fluffiness when combined with fatty things) so I am not entierly sure. For the carb count, I heard that maybe trying dried cream powder might be better than milk?

Animal products are all carnivore, and milk powder is just simply dried milk. That being said, since it's dried the net carb count is higher :-)

Interesting. Should be tasty, but is prohibitively expensive: where I live, milk powder runs abou $19-23/1 lb (that is, 453 GRAMS) of product. I guess it might work as a treat for a holiday or a special occasion

Did you read the label on baking powder? Do you know how much cornstarch and grain it has? First, I got excited about it, and I went to the market and bought the eggs and the powdered milk and then when I read the label on the baking powder, I had to return everything back on the shelf . It’s probably wouldn’t hurt too much to have that recipe once in a blue moon, but it’s definitely not carnivore and not for people trying to heal their bodies.

Hello David, not sure where you are from but in Sweden baking powder does not have cornstarch or grains in it. If you are concerned, you can try baking soda and cream of tartar perhaps? :)

The milk powder Im using would land me on ca 6-7 per each roll - correct! Unfortunately that is the downside of dairy products, especially dehydrated ones. I couldn't tolerate dairy for years on years, but now it works in moderation. If you're aiming for absolute zero net carb, I can recommend a protein bread with chicken base. I'll find the link if you're interested :-)

It's basically dried milk (milk is ca 85% water anyway) and not the same as any protein powder. The only ingredient should be milk, then you know it's correct. I did try these with some protein powders, but they just didnt work for me.

What type of milk powder did you use? I made them with whole A2/A2 milk powder, and they looked beautiful right out of the oven, but then they got flat and wrinkly as they cooled.

I use whole milk powder. Mine also came out wrinkly one time, and that was beacuse I was skimping on the baking powder. Try increasing a bit :)

I use one from Sweden, but basically as long as the only ingredient should is dried milk, it's all good!

I use full fat milk powder - not sure if it matters if I am honest if youre anyway adding some fat through butter powder? Nice idea for experimenting - let me know how it goes!

Saturated fat in animal products really isn't a health issue, despite what we've been taught for the last 50 odd years. There's actually more sugar in the non fat version of milk, if that matters to you.

They look nice but it's not low carb! Milk powder is full of lactose (milk sugar). May be it could work with whey powder

Thanks! They are nice :-) I also had some other commenters concerned about the carbs, and it seems like using dried cream instead of milk might help somewhat with that. Whey powder and protein powders have not worked for me at all

Powdered milk has 14 grams of Carbs per serving...so this won't work for me.

Each bun has around 9 grams, some of the other commenters mentioned you can try using dried cream instead to lower the count :-)

They certainly dont taste burnt :-) But I have had them a minute or so less, and it didnt make much of a difference apart from in colour!
