There's a better explanation for the Yoshi's having many colors. It's not camouflage, it's anti-camouflage. Look at lemurs, for example. They live on the island of Madagascar, where their only natural predator is the fossa. Standing out and finding each other is more valuable for them than hiding, so they're quite vibrant. There are many different kinds because on a small island the winning strategy is to specialize on certain kinds of food, which is exactly what Yoshis do -- different colored Yoshis get more benefit from the fruits that correspond to their color in Yoshi's Story.

It's more likely a Lakitu shell. It's completely smooth and the visible part is red. It's possible that the pattern is either drawn on by Lakitu to the shell so that swirl is a gang symbol for Bowser's army so Yoshi either wiped it off or Mario's Mama Mia wiped it off as he was riding.

I think the different colors can be attributed to natural selection since the green yoshi is in a more grassy green area, the blue yoshi comes from colder climates and the orange one comes from the desert, making them more easy to camouflage

one important point you overlooked was his shell. that isnt a saddle on his back and he is related to koopas, which are turtles. he's sort of a proto turtle which had these partial shells that slowly grew as their ribs modified.

Yoshi has smooth skin, and thus is not scaly. Plus, in the specific descriptions given in the video, all of the other options had scales as well - this was simply referring to things like thicker hide and protruding plates that could ward off enemies.

Chantal E. I didn’t really like this theory as it feels like he just looked at more popular animals. Yoshi would more accurately be an early Abelisaurid. They have 4 fingers, have osteoderms which are just large bony scales, have blunt and round skulls, and still have arms with a functional elbow unlike later Abelisaurids.
