the original gamecube controller had no R3/L3 buttons inside of the analog sticks.. perhaps those extra keys in the controllers you've tried could be set to be those L & R trigger Digital inputs for super mario sunshine.

that is odd. I just bought this adapter and an 8bitdo Pro 2 and followed the instructions and it pairs just fine, but oddly enough, none of the buttons do anything. I have it switched to X. I tried in S too to see if that would work and nothing there either. they always pair fine. but none of the buttons do anything.

Try updating the firmware of your controller, idk if it will do anything but it’s worth a try
