I just made this rice cake using the steaming method. But instead of short grain rice flour I used plain rice flour and added the 1 cup boiling water and and a couple of tbsp. and about 1/4 cup of glutinous rice flour to get the chewy and soft texture. Then I let mine steam for about 30-35 minutes until the rice is cooked through and after it I pound it while it's still hot and shape them as I like. So far my rice cake turned out great. They're soft, a bit chewy which should be and they don't break that easily because you have made it correctly. Your recipe by far maangchi is the best upon all rice cake videos. Thank you very much. Hope you'll notice my message.

I just made this today and it turned out amazing!! Soft and chewy I read in the comment that frozen flour is better but I’ve never seen it where I live so I just went ahead and made mine with the normal rice flour. I started with only 50sec in the microwave and it turned out almost hard! I was already panicking but I added a little more water into the dough. I also decided not to put it back to the microwave because of the hard texture. I continued pounding it rightaway for about 5mins. At first, I was hesitant about the hard and almost crumbly texture, but then it got better after 3mins of pounding. I made it into a ball and surprised that the dough texture became really smooth😂 Tip: Don’t put it too long in the microwave and don’t panic if the texture doesn’t turn out like how it’s shown in the video. You can always improvise and do the recipe your way💪🏻 Thank you Maangchi for the recipe! I didn’t know that making topokki at home could be this simple😊

For anyone out there struggling with sticky plain rice flour, I have some tips. I played around with the ingredients a bit and this is what I did for it to work: (I made this without short grain rice flour) 1. You have to use more water. For 2 cups of plain rice flour I used around 1 and 1/2 cups of water and after that I kept slowly adding more by monitoring the concistency and trying to get it to look like Maangchi's. 2. This is the most important thing to do. Use a loooot more sesame oil. Once you get to the pounding part you will notice that the more you pound the stickier your dough will become. What you have to do is everytime you have dough sticking to your hand you add an additional drop of sesame oil to your cutting board. This helps the dough become less sticky. Do this everytime you notice your dough is getting too sticky.

hi Maangchi! I just want you to know that my 1st try of making rice cake is very successful and I'm very happy! thank you so much! it's extremely easy! I really didn't want to make at first because I could see a lot of people failed but I just followed my heart and watched and listened to this video! I had a little problem at first because when I mixed the bioiling water in my 2 cups of rice its still very dry and couldn't make a dough, I was very upset at first. I didn't put it in the microwave yet because you said it has to be a dough 1st before putting in a microwave. So I put another 3/4 cup of boiling water and to my surprise it was finally turning into a dough! I'm just so happy maangchi because I love gochujang so much I bought 2 kls of it and just love adding them to almost all of my dishes! I didn't have a short grain rice powder however it was a denorado rice from our local market, it is sticky when it is cooked but it's not a glutinous rice, it is quite similar with Japanese rice. I had it grounded to powder from the store where I bought it and it only cost like 1 USD for 1 kl. I did pound it a lot like you said it was very tiring plus the rolling too 😂 it taste almost similar to mochi! and I also tried with the honey I also just in the local market and it taste absolutely heaven! thank you so much Maangchi! love from Philippines

For those asking about using plain rice flour, I used the steaming method (seen in her recipe) and used about 1 and 3/4 cup water (recipe only calls for 1 cup). You can adjust the amount of water needed I just approximated it until I reached the consistency seen in the video. Make sure that there is no dry flour left and it is sticky and heavy. I hope this helps!

I tried to make some of these today, but with limited success. I found that I wasn't able to roll out the dough into a cylinder, so I ended up cutting discs instead. The dough was extremely sticky. I think maybe I did not pound them enough? Anyway, I will be using them in a tteokbokki tomorrow night and I will let you know how they tasted! Thank you for this recipe. Rice cake is SO expensive and difficult to get where I am, so if I can get this recipe and technique right I will be a very happy man. :D

The rice flour that I purchased was not the short grain as I couldn't find and the rice flour came out to hard and not glutinous like the one in this vid. So I used half rice flour and half glutinous rice flour, 1 cup each and it turned out a lot more similar to the one in this vid, chewy and good texture.

The rice flour that you used is not sweet rice flour right? Wanna know is it sweet rice flour is same as short grain rice flour?
@hermione53303 жыл бұрын
@@zarifahmadihah8491 It is different. Sweet rice flour is like glutinous rice flour that people use for kuih. Short grain rice flour is rice flour made from like, sushi rice.

I couldn't find the right glutinous rice flour type like what Maangchi had used and I thought you guys might also find it hard to get the right type. So I just bought normal rice flour and glutinous rice flour at Asian grocery store. I believed these should be available at most Asian grocery stores. Mix the two type of rice flour, ratio 1:0.5, I used 1 cup of rice flour and half a cup of glutinous rice flour. Adding in some salt to the flour mix. And then followed Maangchi's instructions. It might not be as beautiful and white like Maangchi's but they tasted delicious. I fried them until golden with just a bit of oil, took them out and put on paper towel, then toss them with cheese powder.

It turned out beautiful for me because I used 1 cup rice flour and 1/4 cup glutenous, I thinking using a half cup made it too transparent. I kneaded it with stand mixer for 20 minutes and it came out beautiful. I made super long ones, like the ones at the grocery story.

I want to cry. The rice cake was tough. After I took them out from the microwave, I can sense the grittiness of the dough so I added more water to try and make it smooth. However, at the end it didn't become a dough. I still forced it to become a dough and ended up with rough cylinders of rice cakes. 😭😭😭 i just didn't want to waste my ingredients so I iust put them all in my army base stew. It didn't taste good at all but I just have to eat it with my eyes closed. Lol
