Garam Masala is the quintessential spice mix that has a special place assigned in the spice box of every Indian housewife. Garam masala is your go to spice mix to add quick flavor to all your dishes- be it vegetarian or non-vegetarian.
Garam masala recipes also vary from region to region and family to family. The Punjabi Garam masala may have a strong flavor of Coriander and cumin while that from the southern part of the country may have less of these flavors and more of the spices like cloves, cinnamon and star anise.
Sharing today, my recipe of a garam masala that is a family recipe.
Along with the garam masala recipe there is also a Masala Aloo that packs all th puinch of the garam masala!

Recipe :
Garam Masala
Preparation Time: 11-15 minutes
Cooking time: 5 minutes
Makes: Approx. 300g
Ingredients:
12 Black Cardamoms
6 tbsp Black Peppercorns
6 X 2” Cinnamon Sticks
2 tbsp Cloves
30 Green Cardamoms
2 blade Mace
8 tbsp Coriander Seeds
6 tbsp Cumin Seeds
2 Nutmeg
12 Bay Leaves
2 Star Anise
1 tsp Caraway seeds
Method
Take a pan and lightly roast the whole masalas at a medium low flame one by one: cumin seeds, coriander seeds, black pepper, cloves, small cardamoms, big cardamoms, nutmeg, cinnamon, caraway seeds and mace.
Mix all the roasted spices, let cool and grind to a fine powder.
Store in an airtight jar.
Aloo Garam Masala
Ingredients:
500g baby potatoes
Salt
1 tsp Cumin seeds
1 tbsp Garam masala
1 tsp Red chili powder
1 tbsp besan
Chopped Coriander leaves
2 green chilies
½ tsp turmeric powder
2 tbsp Mustard Oil
Method:
Parboil the potatoes. Cool and peel the potatoes. Cut the larger potatoes into halves.
Heat the mustard oil to smoke point. Add the salt and allow the oil to cool down a bit.
Add the cumin seeds. As the cumin seeds splutter, add the potatoes. Turn the potatoes once and allow to crisp from one side. Turn and cook over medium heat for 8-10 minutes till the potatoes are golden and crisp. Add the turmeric powder, red chili powder and green chilies. Mix well. Remove the potatoes to one side and add the besan. Sauté the besan till lightly fragrant. Mix with the potatoes and toss well. Add the garam masala and remove from heat. Mix well. Garnish with chopped coriander leaves and serve.

Two questions Pankajji. Don't we have to cool it before storing? Does it remain coarse even on proper grinding? I have anyway left it a bit coarse otherwise the mixiewas heating up.

We can also keep this whole masala in the freezer in an airtight container n then grind the cold masala which wont lose its flavour n aroma during grinding...

Pankaj ji, I also make the same way minus coriander, but add dry ginger and plpli alsi. Please share that it's the correct way 🙏🙏

Dry ginger, pipli and alsi have a definite flavour that stands out. It is good to use a garam masala with these spices in the winters but avoid using these spices in the summers. Coriander adds a lot of flavour and some body too, to the garam masala.

Mera mom ka special.. just three ingredients for garam masala in veg and non veg curry Which is sprinkled when everything is cooked with Powder of cinnamon cardamom and clove and boiled once only She Begins with hot mustard oil than bay leaf, ginger garlic onions powder zeera and haldi fry than meat potatoes than onion Puree Cook or pressure cook. At the end garam masala ... thats it. It's so fragrant and finger licking tasty. No tommato or dhaniya or sugar or any other ingredients but salt which is not as per taste but measurement. Yes.
