We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

[Ingredients] 4 servings
1 head of garlic (70g net)
1/2 onion
1 tablespoon flour
750cc water
1.5 tablespoons white wine vinegar
2 eggs
Salt and pepper
2 teaspoons of olive oil
A baguette
[Preparation]
・ Chop the onion and garlic.
・ Separate the eggs into yolks and whites.
・ Combine the vinegar with egg yolks.
・ Toast slices of the bread.
【Procedure】
1. In a saucepan, heat the olive oil. Sauté the garlic and onion.
2. Add flour and sauté again.
3. Add water and bring to a boil. Simmer for 15 minutes. Season with salt and pepper.
4. Stir in the egg whites, then the yolks in that order. Adjust the seasoning.
5. Add the toasted baguette slices.
