Reviewing £29 MICHELIN FISH AND CHIPS and I met a FAMOUS CHEF!

Today is a super special video. I've never eaten as a Michelin star restaurant before and I'm going to finally break that by travelling to the Hinds Head in Bray owned by famous chef Heston Blumenthal. However, in this video, it's not Heston who I bump into but another world famous French chef!

I am fortunate enough to have been to The Hinds Head a couple of times. And I agree with you Gary, that whilst it's not a cheap place, it has a great ambience, excellent service, and very , very good food. I'd recommend it to anyone.

My dad used to make triple cooked chips on a Saturday night when I was young in the 1950s. He said the trick was in the resting between the frying This was a skill he learnt from his mother, a South Londoner. My children still talk about grandad's chips.

My self discovered version, is remarkably similar to Heston's, boil the chips, and I mean cook, not parboiled, then deep fry, still warm.. Crisp outside, fluffy inside, and because they're hot, less time in the oil, less greasy... my father said they were the only chips that didn't give him indegestion!

I assume he made double-cooked chips, frying them at a low temp to soften them before putting them in at a higher temp to crisp them. The proper process for triple-cooked chips is very laborious and includes refrigerating the chips and recooking them in stages.

​@@ashcross They were definitely triple cooked. With resting to get cold in-between each frying. We didn't have a fridge. It was indeed very laborious. In fact it took him all afternoon much to my mother's crossness since Saturday afternoon was when I had to have my plimsoles whitened so they would dry in time for school on Monday and of course there was a list of other chores. Saturday afternoon was the only day he got home early. B*** chips my mother would say. I don't know how triple cooked chips are made these days.

As a sea angler I know that just using very fresh fish is enough to lift the dish almost beyond recognition but add Heston's know-how to that and I can only drool at the thought.

Totally agree…just the smell alone can put me right off if it doesn’t smell right …and that batter he’s eating looks over cooked…Crispy no doubt …but over cooked by about 2 minutes….!😳😂😂😂👀

I've lived in Ireland for years and worked as a fisherman on large whitefish trawlers, so I do know good fish. I also have relatives that have been cooking fish and chips in their restaurant for the past 50+ years. Here you would pay about half that money for good fish and chips and would get about 5 times the amount of chips on your plate too. The best are fried in beef dripping, which some people think is bad for you, but seed oils are actually worse for your health as they are extracted using strong chemicals. They also taste worse. There's no special voodoo magic to making good fish and chips. It's just that a lot of people aren't very good cooks and lack the knowledge, so think some fancy named chefs restaurant must be extra special. It isn't. Your local chippy, if run by knowledgeable people who care, could do just as well or better!

I must admit it looks fantastic. My local pub do fresh fish, that is I believe delivered daily. It’s around £15. But I think the sauces really brings it up. I would give it a go certainly. Another really top of the tree video. Total class.

Sorry, but that is an absolutely ridiculous statement - it's fish and chips - use fresh fish, the right type of potatoes, a decent batter, and fry it at the right temperature in beef dripping - job done. I could get the same "taste sensation" from my local chippy for a third of the price.

I have only ever seen Michel Roux Jnr and Heston Blumenthal on TV here in Australia, but , Michel especially , like Rick Stein , gives you a lot more than great food. You get history, culture, and that engaging personality which money can't buy. Hopefully, Michel and Heston will invite you to their respective fine diners. I was in England in 2017 for a few months and I wish I had been to these places. Too late for me now, but your videos are a terrific substitute. I loved England. Was also there in 2003. Ongar, the Quays area in London. Nice friendly people , beautiful old pubs , delicious British ales , the Beigel Bake shop in Brick Lane. I'd top up my Oyster card and off I'd go !

Now... to produce something like that on demand, I think that price is acceptable and it's definitely intended to be a "Treat" and it's certainly all about the experience. Heston Blumenthal's unconventional cooking (the avant garde of cullinare) and dedication to the experience is what you go there expecting. I'd be flying back there to experience some of his other offerings if I lived in the UK. 👍

Wow Gary a real great clip filled with so much tonight, I LOVED IT !!. My friend you got a picture with Michel Roux, so so spooky, I live on a farm and I made his Braised rabbit (which my son shot) with fennel and chickpea puree last week. great review, ive eaten there a few times and agree with your 10 score, i know some people say there should be more chips for a 10 but to be honest any restaurant can throw loads of chips on a plate but not many restaurants can cook a meal like the Hinds Head.

Looks absolutely stunning. I can’t compare your average fish and chip shop to this. In defence of the price, you’re also paying for the atmosphere, the service, the ambiance - the total experience. The fish and chips themselves looked head and shoulders above virtually every fish and chip shop I’ve ever been to. Add the dips and the absurdly crunch looking batter, and I would definitely pay that price, as a one off experience. One wouldn’t go there because you’re starving hungry, you would go there for the one-off experience and the memories. I couldn’t tell you what my fish chips from my local chippy was like a year ago, but I bet that experience would stay with you forever. Eating from necessity and eating for experience are two completely different things for me. Keep up the good work - different experiences and new approaches to food is what is keeping me coming back to your channel over and over again.

I've no idea how I've missed this as it's 2 months old, never the less I'd have gladly paid £29 for that! I love the thought of vinegar infused with shallots, I prefer quality over quantity provided it's top quality which this seemed like, and I'd have rather eaten where you did instead of in the restaurant, it was private dining. I’ve made the triple cooked chips many times. God it is worth the effort on a special occasion. Once I heard the crunch from your first chip I know it was going to be good. £29 , screw it , you only live once . Many places charge 15-20 pounds for F&C and are nowhere as close. I would consider the 29 pounds good value for the quality . Well done on great review

Just found you and love this review, especially after seeing the Harrods one. There's a well-known fish restaurant in Essex and Wapping and their cod and chips are £27, and they're not a Michelin star restaurant, so at £29 this aint that bad, I'd definitely give this a try.

I can advocate for the quality and experience of eating at Heston's restaurants. Many years ago I ate the taster menu at the Fat Duck in Maidenhead, for our anniversary. We could have had a week in Spain but as 'foodies' it was on the list. The food was amazing but the actual experience has stayed with us all these years later. For eg. the seashore taster, where you were supplied with earphones emanating from a shell to listen to the sound of the seaside whilst eating, the taste took me immediately back to a rock pool crabbing when a child growing up in Weymouth. Genius! Well worth the experience.

It's now £13 at my local Bell's chippy in Co. Durham for Fish Chips and mushy pea's - And I need to sit in the car to eat it. So an extra £17 for the Michelin starred experience seems reasonable value to me. Fish & Chips was cheap lunch money for a workers back when I was a lad - So the equivalent of a cheap Tesco meal deal for £3.50 🤓

I've only just discovered this channel, and I'm so glad I did. Its unpretentious and genuinely lovely. The order I've seen the videos in has been excellent too, seeing you first massively disappointed by Tom Kerridge's fish and chips, to seeing you piss-wet through and miserable at the Seashell, and then this - the auspices were excellent given that you met Michel Roux Jr. It's so good to see you enthused and excited by what is the best looking fish and chips I've ever seen, and you have convinced me that a pilgrimage to this marvellous pub is order. I wish I could afford to eat at a place like that Gary. The fish & chips both had an amazing crunch to them and incredible tasting to judging by your comments. Fantastic accompanying dips/peas to go with the meal also makes for an astounding food experience. Heston has raised the bar for the traditional English fare of fish 'n' chips. I am envious of you Gary but in a good way ! 10/10 doesn't seem high enough.

You obviously had an experience and a meal to fly for. Quality over quantity is a Michelin starred restaurant's mantra, so I'm lead to believe. It was obviously good, going by your reactions, I didn't like the look of the fish batter, looked somewhat like octopus tentacles curled up. The sauces sounded nice and a dear little pot of chips, if I had been hungry it would of cost £58, so not a place I would visit, but glad you liked it and met Mr. Roux. Entertaining video as usual and very informative! Noticed on the menu chips and dip for £10, I assume it's the same quantity you had with the fish? 7,000 subs + and climbing...keep it up!

I had a meal in the restaurant side of the pub a few months ago, as a special treat before I began some rather nasty medical treatments. Absolutely amazing, and if the treatments go well I shall return for another fish and chips; I can't think of a nicer way to celebrate!

it might have not been the biggest portion of chips and haddock, but i bet it was the best you ever had. When you think of the best fish and chips you will think of this one, probably not a bigger portion. In my opinion that's absolutely worth the money.

Wouldn't have a problem with the price except for the chips, when you can count the chips on one hand then you're being mugged right off. Chips are literally as cheap as .... well chips 😂

Great review!! Considering the cost of takeaway fish and chips where i live in Kent, i think what you had for £30 at that standard of restaurant is worth it for the experience at a special occasion -I guess it's down to presentation but needs double the amount of fries was my first thought (potatoes aren't that expensive?!!)

I can beat that, once a year we stay in a lovely hotel and I had steak and duck fat chips. I’m not joking when I say I had 3 chips on my plate. Very tasty but an awful lot more plate than food! After I’d finished the chap on the next table asked for more chips and got them foc, I was gutted.
