I ❤ gazpacho! I hiked el Camino de Santiago in 2014 and usually had icy cold gazpacho for lunch. So delicious! If you hike el Camino, you can usually buy a 1 liter carton at most stores that sell food whether they're grocery stores or convenience stores. Carrefour makes an amazing store brand gazpacho. This gazpacho looks really good, too. Can't wait to try it, but not today. Gazpacho and snowy days - no. Thank you guys though for this recipe. 😊

@@HowToFeedaLoon I hope to find out this summer about gazpacho made with home grown veggies. There's snow on the ground right now, but we've been going through seeds and deciding what gets planted when. I HATE hot weather but the garden is one nice thing about our triple digit temperature summers.

What a delight. It is the beginning of summer and I'm going to the market to buy tomatoes tomorrow. What will I do with all those tomatoes?? Oh, yum! But I don't have a food processor! Would a blender work if I was really careful not to over-process? Or would I do better just hand-chopping everything? (Btw, I just love you both!)

Gazpacho is a cold vegetable based soup. You may be thinking of Panzanella, which is an Italian salad which has bread in it. It's delicious!

If you are talking about the original Gazpacho de Andalusia, you are correct. This version is more like a Mexican salsa. Still delicious but not the same.
