Oh my goodness Gemma! This has taken hot chocolate to a new level! Using the real Chocolat and upping it to the 72%😳! Yummy! And chocolate that has at least 70% is actually healthier because of the antioxidants. I never knew you could freeze cream that was another great thing. I can't wait to try this. Oh I remember my old days of thinking that making fresh hot Chocolat was opening a pack of Swiss Miss and adding hot milk instead of the water like it said on the package.. LOL I felt quite the chef! I really loved this video because it was so interesting to see the happenings going on while you are making your video! Everything looks so seamless all the time. You've done it again! I think that you cannot wow me you turn around and just blow my socks off! What artistry in your pictures which are always so inviting and scrumptious. Hello Gemma In your recipe it says 72% cocoa solids. What does that mean? Can I buy a bittersweet chocolate with 70% cocoa in it? Will it be the same as having cocoa solids? Thanks in advance and your recipes are always great!!!

Yes this is the percentage of cocoa solids in it. If the 70% is what you have, for sure use it. I prefer mine with a little bit more cocoa bitterness to it. Hence the 72%

Gemma, this is getting really weird. Every time I bake or make something at home, you post a video of you making the same thing later on in the same day! It has happened three times now. First, I baked an Oreo cheesecake and you posted a new cheesecake recipe a couple of hours later. Next, I needed a cinnamon roll recipe and you posted the giant cinnamon cake the same day a couple of hours later as well. Lastly, today I just made hot chocolate right before you posted this! Idk about you but I think it's crazy. Anyway, ove your channel and I'm happy how much it has blossomed over the years. I've been a subscriber since the beginning.

I love Ghirardelli here in the US, but what I focus on really is ine which is about 72% cocoa solids, and where the taste feels right to me. 70% ish cocoa solid chocolate has a good balance of cocoa butter/sweetness and chocolate flavor, from different places in the world the flavor will change a little. Buy a few bars, look in your local supermarket, you can often find one you like, which does not cost a lot :)

Yes! and you can make your own extract too (www.biggerbolderbaking.com/homemade-extracts/). You can make this really strong if you wish to hurry it up. Shake every day for a few days, then test it. You can also add zest to the hot mix, but you may need to strain it then. Choose a rough skinned orange, and wash it well before paring or zesting, they are often waxed to preserve them :)

Yes, always! Look at the labels in your store, most will indicate the level of cocoa solids. Above 70% - 75% will be great, it will melt really well and have a great flavor :)
