Tip # 6) When assembling your toppings, don’t allow your cheese to sit at room temperature too long. Keep it in the fridge until the last minute (even transfer to the freezer for 5 minutes for extra cold). This prevents fat separation (greasy cheese) as it take the oven longer to heat it. So you’ll have perfectly crispy crust and perfectly melted cheese. Tip #7) do a light layer of shredded cheese and then take hand torn prices and dot the pizza randomly. Having the combination of the bronzed cheese and the pools of molten lava cheese is the best! Enjoy ✌🏼

Rather than putting a cast iron pan in the oven I cook the base in a cast iron pan on the stove top and add the sauce/toppings while the underside is cooking. I then transfer the pan to the grill to cook the top - makes a great crispy crust.

I make your pizza dough every week. Literally every week i have a batch in my fridge lol. So today i decided to change it up. I added some greek yoghurt, slightly less water and a 1/4 teaspoon of sugar. I want to try my dough to be a soft dough, rather than an italian style pizza that the dough recipe usually yealds. Wish me luck. :) ps your pizza dough recipe has changed my life haha.

Pro tip- if you cant slide your pizza to the oven, use parchment paper! Sorry gem, i tried sliding my pizza w just flour, it doesnt work well for me. The parchment paper is just soooo easy! Try it! But if sliding pizza is too much work, use a pizza pan w lots of olive oil. The oil will cook the dough and will still produce soft but crunchy pizza. Promise. :)

Thank you for the video. I've been failing miserably at baking pizza dough these past couple of weeks, the dough is tough after removing from the oven. I was letting the dough rise for 1 hour, then placing in a 350° F oven for 30 min. The crust has come out super tough. I mean, I could literally patch a leak with the crust. So is the key or secret to the perfect soft, chewy pizza crust a proper fermentation of the dough and the oven being as hot it can get?

At the pub I used to work at, the chef wouldn't let us cook pizza with the basil on it. It had to be added at the end so it didn't turn black when it reacted with the high heat. The reason for that is the basil is too tender to be cooked this way. But, to each their own, right? Still looks good.

Looks good, a lot of people like crispy thin crust pizza, not me. That doesn't mean I wont eat it, but where's the meat and veggies, LOL I like deep dish or thick bread crust with hamburger & tomato sauce topped with cheese, sausage, portabella mushrooms, green peppers, onions and maybe some sliced olives. A slice of mine almost weighs a pound. I make mine on a cookie sheet sliced in rectangles because a triangle can't hold the goodies. LOL

@@biggerbolderbaking I just had your deep dish video recommended last night by youtube. I guess the AI likes to read my comments. I could test this since I do plan to make some cookies and I don't mind sharing this recipe to see if I get peanut butter cookies recommended by YT's AI. Peanut Butter Cookies 2½ Cups Flour ½ Teaspoon Salt ½ Teaspoon Baking Soda 1 Cup Butter Flavored Crisco (shortening) 1 18oz Jar of Jif Extra Crunchy Peanut Butter 1 Cup White Sugar 1 Cup Brown Sugar 2 Eggs 1 Teaspoon Vanilla Preheat oven to 375° F Mix Flour, Salt & Baking Soda. Set aside. In large bowl mix Sugars, and Crisco. mix in eggs. Next, add Vanilla and Peanut Butter and mix well. Add Flour mix and kneed into a dough. Form 1 inch balls and place on cookie sheet, Press with fork. Bake for 10 -15 min. until lightly browned. Remove from cookie sheet and let cool. Yeilds about 4 dozen If you substitute the Crisco or Jif, they wont be the same melt in your mouth, but still good. Enjoy.

Greetings Gemma! You have some excellent content and information here!! As a fellow experienced pizza maker, I wanted to point out that the pizza pan you mentioned here is not cast iron but cast aluminum. I would consider checking out Lodge manufacturing for a suitable cast iron pizza pan or even their large skillets for baking pizza! One of the best investments I’ve ever made however, was in a custom carbon steel sheet that has a permanent home in my oven and was fabricated by a local steel shop very inexpensively..

Tip#1. Hold back on the liquids while kneading the dough, dont add it all at once. Tip#2. Crank up the oven temperature, Hotter the oven better the pizza. Tip#3. Shaping the pizza dough using your knuckles and stretching it out gently making it round. If the pizza dough isn’t stretching properly you need to let it rest for a while again to help the gluten relax. Tip#4. Sprinkle semolina (Coarse durum wheat) before putting your pizza dough on the baking tray, this will ensure the dough smoothly slides off the tray without sticking. Tip#5. Slide the pizza onto a preheated tray. This helps the crust bubble up and get crunchy.
