I love watching your recipes because it’s the little details like putting the wooden spoon in oil to check it that I learn that would never learn in school or anywhere else and also the recipes are so practical sometimes other recipes over complicate things 😂😍

Looks nice! Mom always said to cool the dough before adding eggs, about 10-15 minutes. I stir by hand with a wood spoon.

A Candy thermometer clipped to side of ur pot/pan is actually better for newcomers , you can get ur oil to perfect temperature which should be anywhere between 325 ° F. to 350 ° F. So u can adjust it to exactly the way u like ur Brown Color & speed of frying to be...🍩🍩🥯🥯👍👍👍👍

I just got done making these for anyone that wants to know how are they. For 1, I Printed out her recipe, And watched The video at the same time As I made the dough. And as soon as I put the flower in, I noticed it smelled like mashed potatoes instantly. It didn't smell like garlic , And not because the way it looked, But for some reason they smelled like mashed potatoes. But I was trusting the process and Continued on. Then when I was Mixing each egg in, The smell was just getting stronger and stronger as If it were mash potatoes. I still continued on. Then once I fried a couple, Something told me.I should taste it before I continue, So I let them cool down and tried one. Well it did not taste like a french cruller at all. To me they tasted like those things That my grandma used to make to dip in our soup when we were younger. Im not sure whats it called but its a dough that she would make from scratch and fry. And in my language we would call it pufay. (Im gypsy). And once it was done it was a delicious salty bread type we would dip inside of our soup. And this is exactly what it tastes like. ( and before anyone asks, no i did not use salted butter. I used UNsalted butter. And i used 1 TSP of salt into the mixture as it says to do so in this ladys recipe). So what i did was i had to empty all the mixture i made back into the bowl and i added more sugar which was alot more ( im not exatky sure on how much more i just kept pouring, mixing, and tasting as i went on) and i added about 4 cap fulls of vanilla extract. All to get rid if that salty taste it was giving. And what i mean by salty is that im not saying it was really salty. I mean it was too salty to be a french cruller. I really wanted to add milk to kill the salt taste but it would have made the mixture wattery and by adding the vanilla extract was makinv it get there already. But after adding alot more sugar and adding the vanilla extract and re pipped my bag and fried them, to me it tastes similar to a funnel cake. I mean its actually pretty good. But not a french cruller. And before anyone comes for me or asks about how much of measurements i used for what, or what type or salt, flower, butter etc, trust me i did EXACTLY everything she did and used the SAME measurements and same for the ingredients. This was my experience i figured i would share it.

I’ve made cream puffs with a similar choux pastry, and they were amazing. They didn’t last long either. I’ll definitely try this recipe. I did panic about the paper being added to the oil. Only for a split second. I reminded myself you always know what you’re doing before you said anything in the video.

Hi Jessica. You can make this dough up to 3 days ahead and store it in an airtight container until you are ready to pipe.

Yes, absolutely. It might not keep its shape that well because of the longer cooking time, but it is technically possible. Hope this helps.

I’m not sure how that will turn out as it will change the consistency of the batter. It might break apart when fried. I would say, makes these as it is, to get that perfect texture and structure, then dip in strawberry glaze.

My grandmother used to put a match into the oil to check the temperature. When the match caught fire, the oil was hot enough. But you have to use the old-style matches with the white phosphorous head. The new matches don't work.

@@biggerbolderbaking Your wooden spoon method is easier and cheaper. But not as showy. Your method also doesn't risk introducing chemicals into the oil. But who doesn't like a good show?

I don’t recommend it, Marilyn. It might not hold its shape when deep fried. It might work if you bake these.

There are recipes for crullers that use oil instead of butter. I have not tried it though, but it is technically possible.

It's not an option for me at the moment, as getting these content online takes up time already. A bakery is not just about having a place to bake and sell what I share here, it requires a serious commitment to put up and maintain one. Maybe someday, I will. But for now, you can make all these goodies in the comfort of your home.

Can I use whole wheat flour instead of all purpose flour?

Technically, you can. Note that flours do not absorb liquids the same way; it may need more or less the amount in the recipe. You may need to adjust the amount of wet ingredients until it reaches the same consistency as shown in the video. Hope this helps.

Did you measure according to the written recipe? If you did, perhaps it wasn’t chilled enough before frying.

@@biggerbolderbaking I followed you're video Step by step. I even left it in the fridge over night. When I fried them. They came out like a doughnut then a minute later they became soft. The next day they were flat. They were delicious but you couldn't pick it up without it folding

I know this is difficult to understand, but people around the world measure in different ways. We have to give cups/metric measurements and imperial measurements. It takes too much out of the flow of the presentation, and really slows it down. We know, we tried it before, and it was just as tricky.
