Yes, it is the best time to make this. To store, replace the parchment and foil with new pieces before storing the pudding away in a cupboard for as long as 2 months or until Christmas time. It can also be frozen. To serve the pudding on Christmas day, steam again for 1 hour and serve hot. Store leftovers at room temperature for up to 3 days.

There's a Dutch New Year's treat that is made with raisins & candied fruit, and it too calls for grated apple, presumavly for moisture. I do sometimes leave it out because I can't seem to time it right to have it ready to mix in, without turning brown (ours is deepfried white yeast dough). Many years ago, on the US, I found a ceramic pudding basin with a lid and grooves for the string in both pieces. I snapped it up - a very rare find in the US (I have several tinned steel ones as well). Thank you for the mixed spice recipe. I have made my own Dutch spice mixes of various types but never knew the specific ingredients & proportions for British mixed spice.

It’s my job to make the Christmas pud for every Christmas. My mum assigned me the duty when I turned 30. She used to make it up to that point. The recipe is my great, great, great grandma’s dated 1833. So every year, about 2 months before Christmas, I make the pudding with lots of brandy of course and come the day I make the hard sauce to go with it. Just before serving I heat more brandy, pour it over the pud and light it on fire for the usual oohh’s and aaa’s. I love it. Your recipe sounds wonderful as well but is slightly different than the one I make.

Christmas pudding and cake and mincemeat were always made late, (September instead of August that my Mum was taught). The whole lot of us kids were involved. Dad was at work. All the time it seemed. 60 to 90 hours a week. Ah the wonderful 1950s. Mum would be chopping while we kids were stoning prunes, huge raisins and blanching (ie skinning) almonds pre soaked in boiling water. Mum hated getting sticky and greasy so she also had the us grease the greaseproof paper for covering puddings and lining cake tins. These latter were then wrapped in a double layer of brown paper tied on with string. Bits of clean old sheet were tied on top of greaseproof covered puddings. Old cleaned jam jars were filled with mincemeat. Oh yes. Everyone had to stir the cake and pudding mixes 3 times and make a wish. Dad used to do his wishing when he came in for tea before going back out to work overtime. He walked the mile each way as well as in ourvstreet only a self employed plumber had a van. No one had a car. After all the preparation in amongst feeding snd caring for 4 kids mum then was up half the night boiling the puddings and the cake making day, waiting for them to bake. No wonder she was always so shouty.

That looks absolutely delicious! I want to eat it. I want to make that. It is a rich Christmas pudding. So many different ingredients. Gemma, I think you should invest in an instant pot. It is an electric pressure cooker. No water is lost. I feel your pudding would have cooked in shorter the time in an instant pot and you wouldn’t need to add more water or cook for 2.5 hours. Shorter time, lesser water

Just curious as I’m Irish American and my mom and grandmom made this, why do we tie the pudding with twine but not when we make like an Easter chocolate pudding?

No, but you can use it if preferred. Either salted butter or unsalted butter will work. Substitutes: Margarine or coconut oil for a dairy-free option. It’s also made with beef suet in some families. Hope this helps.

No. Christmas cakes and puddings are so rich that they're usually eaten in small portions. It will not make most people drunk, unless one has an unusually low tolerance for it.
