This recipe was sent in to me a long while back and I have to apologize to whomever sent it as I didn’t not write that information down. Sorry about that! This comes from a recipe book of food the stars purportedly ate. This is the submission from actor and dance Gene Kelly. All he had to do was use “he-man” instead of “man” to make the name sounds ludicrously out of touch by today’s standard. On paper, this didn’t sound like it was going to be all that impressive. Then I tried it.

I've never had leftover mashed potatoes in my house but if I ever do...perhaps it will make me able to dance like Gene Kelly.

Maybe plus up with some thin prosciutto. Or really go for it with some leftover corned beef or pot roast. I definitely want to try this one.

If you put prosciutto in an air fryer for about 3 minutes it becomes very baconlike.

Old kitchen trick for cold butter - run the knife across the top of the butter so that you get a thin curl. Then it is very easy to spread, even when the butter is rock hard.

Gene Kelly was from Pittsburgh and obviously inherited that city's great love of putting potatoes on top of their sandwiches. Never a bad thing.

I'm from a town outside Philadelphia--opposite end of PA--and we didn't do that. I didn't experience it even when we visited my uncle and his family in Pittsburgh. How much credit goes to the sandwich, and how much to the beer?

I'm from Pittsburgh - the famous sandwich here had fries, not mashed potatoes, but the idea behind it is the same. Cheap, hearty sandwiches for hard working people.

It would taste different each time, depending on how you seasoned your mashed potatoes as well, if you put garlic, or cheese, or lots of herbs in the potatoes, for example. As an aside, I LOVE Gene Kelly. He was my favourite of the big screen movie musical performers, especially as Brigadoon was my favourite musical.

Only plus up can be adding some protein on it and it is adding protein to non-meaty sandwich but we do not do that here :D

Gene Kelly’s sandwich, while rich and caloric, sounds delicious. Thanks! I’m going to make these for tea tomorrow. I need to either make a baguette or go to the store to buy one. It’s freaking cold and snowy here, so I suspect I’ll need to find my baguette pan. But regardless, that looks deeply satisfying. But I might add a layer of sharp cheddar grated on top before broiling.

a good plus up would be something like horseradish (since that goes well with mashed potatoes), ham (b/c duh), or cheddar cheese (b/c again, duh)

I think just softening the butter enough for spreadability should protect the bread from sogging out. The chunks of butter looked delicious, but didn't form a real moisture barrier.

I like Duke's and Kewpie, personally. But for most of the sandwiches I use Whole Foods mayonnaise as it is pretty neutral.

This is hilarious to me! My grandpa moved back east from New Mexico for work. He liked it there but he couldn't get used to the food. (This was back in the middle of the 20th century) He used to say that people there would be happiest with a mashed potato sandwich with mayonnaise on white bread. And, here it is the very thing. I may have to make this just to rile up Grandpa's ghost. 😂

That's pretty close to Hemingway's Red Onion sandwich, and glass of red wine, Papa's favorite snack, according to the Hemingway Cookbook. Apparently, onion Sammies were all the rage in the 40s and 50s. Who knew?

You could plus it up with garlic salt instead of regular salt. Not a huge difference but I bet one that contributes a bit of complexity to the flavor.
