He was never really a "bad guy" in the lore. He hated the Jedis cause they sided against his race in a conflict. His story is actually pretty tragic. A species called the Huk was invading his home world for ressources and to make his people into slaves. After being pushed back and defeated, The Huks sought help from the Republic, and the Republic gave the help (despite the Huk being the ones invading in the first place) which resulted from hundreds of thousands of death of Kaleesh (Grevious' species) from starvation. Later on, Count Dooku wanted Grevious to serve for him but Grevious refused, so Dooku set up a trap in his spaceship which basically destroyed his body and forced him to become a cyborg, and to work under the Siths' orders
