📋 INGREDIENTS:
• 2 sweet potatoes
• 1 can of chickpeas approx. 240 g (8.5 oz) drained weight
• 2 tablespoons olive oil
• 1 teaspoon paprika powder
• ½ teaspoon cumin
• Salt & pepper to taste
For the avocado dressing:
• 1 ripe avocado
• Juice of half a lime
• 2 tablespoons olive oil
• 1 small clove of garlic
• 2-3 tablespoons of water (as needed for consistency)
• Salt & Pepper
Roast in a preheated oven at 200 °C / 392 °F (top/bottom heat) for about 25-30 minutes.
