Tonight I’m making a chicken corn and potato chowder! In a large crock pot I put 1lbs of petite red potatoes quartered, 1/2 Med onion diced, one can of great northern beans, one can of sweet yellow corn, one can of white corn, 1tbs minced garlic, 1lbs chicken breast, 1 spring thyme, 2 cartons of chicken broth salt and pepper to taste, low for 6 hours. Take chicken breast out and cube or shred, I prefer to cube. Then wisk in 1/4cup corn starch, 1 cup heavy cream, 4 tbs butter and 1 bag of shredded cheddar cheese and low for 30min to 1 hour more. We top with bacon crumbles and more cheese.

I'm enjoying Gina's cooking segments more. She seems more enthusiastic and relaxed and looks into the camera more. The recipes seems easy and delicious. I'm inspired by your team work in building and repairing you animal equipment and garden buildings. Keep up to great work. Your channel is my favorite. :)

Good morning Lumnahs... the grass is getting greener and the piggies had breakfast in bed. It's raining instead of snowing. The sound of goats and chickens fill the air. Ahhh! It's Springtime. My husband is from Tonga where that is the most prized sweet potato. The white interior with a red skin. They say kumala for sweet potato(any kind). I like them, but I like any sweet potato. But these had to grow on me at first. The flesh is so firm. They have to be grown in a warmer climate, possibly for the length of the growing time. We would always get them from Texas! I have some special seeds Be sending to Olivia, something for her to grow in a pot (the soil needs to stay warmer.) Course I'm presuming Olivia likes growing like her mom and dad! 💓💛💚💙💜🐞

That new barn has really become the hub of activity on your Homestead! It is so good to see you all down there every single day using it and enjoying it. It looks like your layout design really is working. I am interested to see what you’re going to end up doing with the rest of the other side where Willow and Nora are. Also I did hear you mention last year that you are thinking of adding on to the back. Maybe just an overhang so that the goats can get outside under cover. So enjoyable watching you all build and develop your gorgeous Homestead ♥️

Great upgrades on the chicken tractors. I'm thinking that renegade chicken is probably named Karen. And I love those crazy hairdos on the baby black chicks! They are growing so fast Hi to Gina and Livvie.

I remember when you and Olivia built one of the chicken tractors. They have held up quite well. With today's improvements, they not only look fresh with the white tarps, but will protect the birds with the reinforcements. This is the first time I have ever heard or seen white meat sweet potatoes. God Bless

I enjoyed your videos,always fun and informational. Jina, if I may give you a suggestion... Slice potatoes in half lengthwise and place chicken on them. It keeps the chicken from sticking and you can eat the potatoes!!!! They are infused with favor from chichen.... I think (though I could be wrong),what someone called sweet potatoes were yams. Thank you for sharing your journey and many blessing on you and your family.

Sweet potatoes and yams are two different critters. Yams originated in Africa and sweet potatoes originated in the Americas. The similar plants must have at one time been the same plant before the original solid single land mass split up millennia ago.

Gina you should make the original carbonara. It is just bacon, 3 egg yolks and 1 whole egg, Parmesan and pasta. Boil pasta and simmer bacon with 1 tablespoon of garlic, combine egg and Parmesan, add pasta to bacon, add egg mix to it all and you are done. It is amazing!!!!

I enjoy reading the comments, especially since Gina started asking what we are fixing for dinner. Gives me alot of ideas and makes me think. That being said, lastnight I made crockpot chicken and noodles for my family. Since this virus quarantine I am watching my two grandbabies while my daughter and son in law work full time, (daycare is out for a while) I try to cook for them a couple times a week because they are so busy. It's tough finding new things that everyone will like. We do our best to please. Thanks everyone for all the awesome suggestions. God bless.

The lighter colored "sweet potato " is usually called a Yam. Yams are a lighter species in the sweet potatoes family. The "Red" are called Garnet Sweet potatoes. The Yams are not as sweet as the garnet and usually are used for what they call "candied " yams. Both are really good. The lighter is also known & liked by Polynesian culture. We like to eat them and do take a lil longer in cooking because they aren't quite as soft in flesh. We eat them almost as much as we eat taro. Enjoy. I like to add a lil coconut milk and brown sugar to mine.

Love your channel! Last night I made a vegetarian chili. It was a new recipe for me out of The Pink Ribbon Diet Book. It rivaled my own chili recipe with meat. I will be making it again! It included olive oil black beans, kindney beans, chili beans corn nibblets and crushed tomatoes with seasonings. Yummy!

A few days ago, I watched a four part show about the Waltons. It was really a nice to see that in real life the actors got along off screen as much as on screen. I'm telling you this because I've only recently started watching youtube videos. I've never watched a lot of TV and I rarely see movies. I've probably been watching homesteading youtube videos for three months or so. Your family and many of the other homesteaders remind me of a working good family. I realize no family is perfect, but on video, no one is mean and there is no sarcasm. Instead you show what a really good dose of family life. I wish TV would realize we don't need junk TV with nastiness. I enjoy your channel a lot. You exhibit a lot of kindness and wisdom. Gina- I admire your skills. I hope you teach Olivia about building things as well. She will be a young lady soon enough with tools, intelligence and beauty.

Turkey meatballs in tomatoe sauce over egg noodles. Yummy 😋. In meatballs I mix oregano, scallions, panko bread flakes, 2 eggs, garlic powder, onion powder and pinch of salt. In pot, add 2 cans of tomatoe sauce I add garlic salt, onion salt, some sugar to take acidity away, diced 2 fresh plum tomatoes, oregano and cook down. Then add the turkey meatball to cook with 1/2 cup of water, until thick sauce again. Ready to go over large egg noodles, and enjoy.

Good morning. Lots of rain coming down today. It will be a great day to put down some flower seeds. Tomorrow we will start getting our yard ready to put hardy vegetables in. Today is a good day for roasted chicken for us as well as mashed potatoes green beans and buttered corn and no knead rolls. Yall had a nice amount of good milk today. When Buttercup has her kids that will increase the flow. Have a blessed day.

Weight and cost. Also, the tarps are good for blocking the wind. What I do envy is that you were smart enough to save by buying one large tarp and cutting pieces.

We did 50 meat birds last year lost 3 so, 47. We are down to the last one. Took that out this morning to thaw. This year we're going with 60. We also ordered Jersey Giants to raise to see how they do for meat. We know it takes much longer to grow out but if it's good we won't have to keep buying x's. We will just hatch them out. Time will tell. Gina, my mother is with you. Chicken twice a week with leftovers for lunch and she's happy. Stay safe and God bless you my friends. 🌱🦆🐇🐷🐓🐄🐐🐣🌱

When I was much younger my Grandmother would make sweet potato pie all the time. They were usually with the orange insides but on special occasions, such as Thanksgiving and Christmas she would always make the pies with white sweet potatoes. It just made for a special treat, and a special memory.

I assume you will want most of the compost over in your High Tunnel You may want to rent a dump trailer and move all your compost piles over either in or just outside the high tunnel. Make one big pile to make it more active and get some earth worms and add to it. They will break it down faster and make it more nutritious. Add your wood chips and any other items compostable items and it will be ready faster.

I'd keep the tarp as you never know when you might need a small section of tarp to fix or protect something.

Just found a video in my recommended KZbin list demonstrating how to put the plastic cover on the Greenhouse; I used to be in IT but its still eerie when KZbin anticipates my curiousity. Video showed a large greenhouse covered by two people, but they were both big, strong, not afraid of ladders, and HAD DONE THIS BEFORE. Looks to me like party time for you folks; sort of like harvest day, or a barn raising. Good luck!

I've never seen that type of sweet potatoes im going to go on the hunt and see if I can find some and at least try them . I have never been a fan of sweet potatoes growning up but the past few year my taste buds must have CHANGED cause I love them NOW alot . AND Gina your chicken looked awesome that is what im making for dinner tonight. And chicken is my fav also its funny thats all i craved when i was pregnant with my girls i always say i ate so much chicken im surprised they didn't come out clucking lol . Anyway I have to get finish getting ready to go to work have a blessed day and see you tomorrow.

We only have dinners at our house. Food cost prohibits anything but that. But God always provides & we are healthy, grateful & blessed. Hoping the same for everyone else.

Gina, try this, next tie you roast a chicken. Before you oil or season the chicken, set it in the sink and pour a pot of boiling water over it. You can see the skin shrink, as the water hits it. This will render the fat from the chicken skin, which will make it crisp up better and faster. If you plan on pulling the skin away from the meat, to season under it. Be sure to do that BEFORE the boiling water. The boiling water will make the skin very tender and easy to tear.

I’m making veggies stuffed cabbages for my daughter and her husband with home made biscuits, energy bars and broccoli soup. For us I’m making white meat chicken patties and gravy, mashed potatoes, broccoli ,coleslaw and biscuits.....brownies....I’ll also will be making homemade beef veggie soup for tomorrow.....and homemade egg bread... I like to cook a couple of meals so I can work outside and not have to worry about cooking when I come in....if it’s raining then I sew masks.....making them for a Indian Reservation that is in great need....

Just moved to CO and my son makes white sweet potatoes, love them. He slices them about 1/4 inch and roasts them with olive oil in a hot oven with sliced onions on top. Then he puts a sauce of olive oil garlic and cilantro on top when they come out of the oven. Goes great with roast chicken.

Good to see Gina learning the ropes on how to milk Willow :D Aw Gina's face when she thought she broke the drill with the tarp! So sweet :) That roast chicken looks amazing. The chicken tractors look awesome with their touch up! For lunches we may do a soup or sandwiches. And sometimes get a pizza :)

We had Andouille sausage with onions - made a sauce with heavy whipping cream and Cajun spices - then made some linguine noodles and at the end sauté some shrimp and put it all together! Oh my goodness Gina it taste amazing. You can leave out the shrimp if you want. Peace and blessings to you and your family and all the animals!

Glad you are getting more chickens this year so you don't run low. Really like the chicken tractor upgrades. Its just a different variety of sweet potatoes. I know of orange, white, and purple.

Also having chicken, but some leg quarters. Each piece wrapped in aluminum foil with some potato, carrot and onion slices, topped with a little cream of mushroom soup. When we use to go camping, we'd do this, and put the packages in the fire to cook. But an oven will have to suffice tonight. Easy clean up and yummy.

Dinner will be Venison Chili this week. I live alone and a pot of it goes for several days. Trying to stretch my meat with the beans and tomatoes. Recent batches included elk and wild boar. Chili and spaghetti are good ways to use canned meat once the freezer is empty. Canned chicken is not my favorite, but in those dishes you don't really notice canned vs fresh. Hopefully friends and family will restock my freezer in the fall when hunting seasons start up again.

I do all the cooking in our house and love it. Tonight on the menu are baby potatoes, fried slowly in a little oil, adding tinned sardines and crushed pine nuts to warm through at the end. Probably add a little green salad with french dressing. Keep up the good work!

Due to my health issues, I don't really cook anymore; however, my favorite thing to eat for lunch and/or dinner is chicken and dumplings (Southern style with the drop dumplings) and crockpot pot roast with mashed taters and gravy! Yummy! Btw, Gina, that chicken looked delicious! Congrats on the new greenhouse and revamped chicken coops. I do enjoy your videos, Lumnah family. Thanks for sharing your lives with us. Your videos take my mind off the chemo and radiation treatments and allow me to mentally escape for a bit. I consider that a blessing...so thanks again! Much love from the Sunshine State!

There's lots of women around that know the right end of a drill. Look for the picky ones that are not waiting on men to make and fix everything. Look for them in places like church and Home Depot "learn how to make..." classes once those places get reopened.

Susie'sSoap&Stuff Gina is actually a younger version of myself. My hubby loves it when we do construction things together. So far, we have renovated2 houses! Since weve been married, Ive learned to lay tile, do rough carpentry, simple plumbing and chain link fencing. Landscaping and painting were already in my back pocket. He does the electrical(to code) and the major plumbing (also to code). Only roofing is out of our reach (literally- i dont go higher than 2 stories). I love learning from Al and Gina!

You need to add a storage compartment on the outside of the large chicken house/brooder for feed so that you don't have to go back and forth to the barn. Also maybe a water catchment system.

Goooooood Morning Al , Gina & Olivia , I see that Olivia , like myself , likes the best part of the chicken. The crispy skin ! When I was young , about Olivia's age , my mom used to bake some sweet potatoes that were more yellow inside rather than orange . They were also more dry. Very yummy. Today I don't find anything except the orange ones ( yams ? ) which are also very moist ( wet ) inside. I built two chicken tractors like yours. Now I am modifying them to have a second story on one end. Roosting bars will be inside in the top portion. A water bucket and nesting boxes in the bottom portion. Ridged plastic / fiberglass panels for the roofing. Rain water ( and heavy dew ) drain off the roof into a collection channel and then into a funnel to fill the five gallon water bucket. A sponge in the funnel acts as a filter for trash. It works very well . I have already set up a 4' X 8' chicken tractor the same way. Six chickens lived in it all winter. All of the roosting bars are on the same level so there are no upper bar superior chickens. I am using 2" X 2" which when all attached together is quite sturdy enough . And much lighter. Six foot dog eared fencing boards make up the sides and the nesting boxes are at ground level on the back side.

They used to do sprouting blends in pickle jars, wet 'em down, git 'em going, and rinse 'em daily once they git goin',and eat at will until they start rotting. Then I used to sprout lentils, mix it with cooked long grain organic brown rice: cook up a stew from that base. Quick and not deadly.

I am from Louisiana, so I make sure our sweet potatoes are dark orange inside. I buy only the ones labelled as from Louisiana, or I buy one, cut it, then go back for more if it is the proper color. I made a big pot of spaghetti the other night, so leftovers were last night's supper. The remainder of the sauce is going into the freezer today, as I am burned out on leftovers. We are starting meal planning two weeks at the time so that I can order groceries ahead of time and so that everyone gets input on meals, not just me deciding all the time. My daughter is home from college (she was supposed to graduate in May, so she finished online while safely at Mom's), and she cooked at a restaurant. So she and my hubby are getting to help cook also.

Everything you make is perfect!!! Love watching your family homestead... I just have 10 chickens 8 bee hives and a garden on my 1/4 acre lot. Also pet bunnies ,a cat and a dog. ..we are having pork marinated in a low sodium soy sauce and fresh home grown honey.

We used our last chicken tonight with home grown/canned green beans and grits. We have 2.5 week old Cornish cross right now. They will go out in our tractors in about a week. We used your plans to make our tractors last year but use hardware cloth.

Gina, I got up at the crack of dawn this morning to make a French Toast Bake so the liquids could soak into the homemade cinnamon bread and sourdough bread in time to bake for dinner tonight.

I'm having lobster bisque tonight Gina ! It's not homemade. I get it from Gulf Shrimp here in Connectict. It comes frozen so I heat it up with my instapot. 9min high pressure with a slow release. Double potted so it wont scorch on the bottom. All your animals are beautiful and wall taken care of!

Chicken soup with HUGE corkscrew Italian made noodles. I made the chicken stock yesterday when I pressure cooked chicken legs for the dogs. Fried an onion in butter with turmeric a little raw sugar, garlic... dried oregano from a friend's garden. One can of crushed tomatoes. Celtic salt and ground black pepper. and a few celery seeds. It was delicious!

Tonight was beef bourguignon (kind of). I used a beef shoulder cut into cubes, did not have any mushrooms (pandemic shopping trip was 1 week ago and I did not get any shrooms). I used chopped onions instead of pearl onions as well. Making due, with what we have on hand, but it was delicious.

I don't have dinner planned for tonight yet, but last night we had meal #3 from one of our very expensive Organic chickens. I'm one of your suburban viewers who has always wanted enough property to grow my own food, but it just isn't practical at our age. So I'm growing veg and fruits but still have to buy meats. IF I can get my husband convinced to have a few hens again, we might try meat birds since I've learned how quick it can be!

What I am having for dinner: a concoction I made up with some ground beef, tomatoes, salsa from ingredients from my garden, onions, kale (both from my garden), and quinoa. Big topping of migrogreens and sour cream. I love growing microgreens - so easy - grew them all winter inside, but now they're outside. I use them to top everything. Soups and tacos. Now it's 90 degrees outside...I just can't imagine having snow.

I’m planning to smoke a chicken actually. I’m currently using my grill to smoke meat and I’m still trying to get the hang of it; someday I’ll buy a smoker but I’m not ready to part with my grill yet (the ignition button is dying and I sometimes have to use a lighter to light it). I love watching the meals you guys make, it gives me ideas of what I can do with my two sons. We pick up our meat birds in 6 days!
