Whenever Vadas are made, I always think of my mother who used cook Vadas ( gaarelu i n Telugu) for four devils, their father and their Grandmother on almost all festivals struggling with the mortar. By the time we gather for lunch ( no dining table) , barely two or three left with lots of ginger chutney. I am sure mothers like she and you never bothered about your share. Now, my share is two, with lot of begging my wife grants two more. Seeing the plateful in your video, I am wondering how to steal the plate and who wants chutney for the eternal Vadas?🥰🤩🤩🤩🤩🤪🤪🤩

Made medu vada today for the 1st time using this recipe. Used half of 1/4 cup of water for 1/2 cup of urad dal (soaked for 3.5 hours) for grinding in my mixer and did the water test as well. Batter was perfectly done. Didn't add anything except salt and they turned out to be super soft and crispy. Also didnt absorb much oil. Thank you mam...

Yes you can definitely do it. One reason could be that the batter was not ground well . Try again It will not burst .What kind of salt do you use? In case it has any dust particles then it might burst.Try again It will definitely come out well . Take care

Yes you are right. When you grind in a wet grinder, the batter is very light and fluffy, and doesn't get heated too. .

Hi, Gita. Love watching your channel. I tried the medu vada. The taste was good but the vadas were dense, not light and spongy. However, they were not oily which was a plus point. I don't have a wet grinder and used a blender. I am not sure whether the denseness of the vada was due to the batter or due to the oil not being hot enough or both. I remember having heard, when I was growing up in Tamilnadu, that a few grains of Fenugreek could be added to the Idli dals, when they were being soaked, to make iddlies soft. Is that true for medu vadas as well? Your comments would be very welcome.
@GitasKitchen4 жыл бұрын
Thanks,, yes grinding in a wet grinder does make a world of difference . if using a mixi, try to beat the batter very well to make it light . we need methi seeds only for idlis . if you regularly make idli dosa vada it is worth investing in a wet grinder , you get soft fluffy batter and much more volume too

Ma’am, I am a big fan of yours. I love South Indian food more than I love my own, Gujarati, cuisine. The kind of taste one gets in South, I haven’t yet got that taste in Mumbai anywhere. Been to a few houses in Tamil Nadu and Karnataka, and the homemade dosas, idlis and vadas are to die for, and so are the rice and vegetable dishes. I do make dosas and idlis, from scratch, with the recipe my physics teacher from Chennai had given me. And the dosas turn out to be as good as the ones you make at home. Looking forward to learning a lot of traditional recipes from you. Thanks a million for sharing them. 🙏🏼
