Dear chef, I have been trying for years to attain this perfection. Even after seeing my mom who is an expert in Vadai, I have not been able to get the level of expertise.Today after following your tips and recipe I got confidence and it's on dot. We tried this recipe and the vadas were simply unbelievable! I've seen my grandmom, mother, and all other relatives cooking vadas. In fact, they are all awesome cooks. To know how chef put the vada in oil, please check at around 6:15 minutes in 0.25x speed (slower) and you can see how he puts the hole in the vada before dropping it in inside the oil. He was super quick , so watch it in slow speed.
