This is nice, I watched this video cos i just made amala,& alway its soo black & bitter ,am wondering if it was ground with d peels, its soo horribly bitter and black ,no matter how long i cook it for. But when i buy amala in bukas they are not soo black & they have no bitter taste, wanted to find out why, would have been the icing on d cake if u had made a little for us to see d outcome,,pls try to answer qtns,thanks🎉

In fact I made a video on how to process poundo yam flour and I used a food dehydrator for it kzbin.info/www/bejne/fZiQg5qJp8qSp9U Personally, I won’t use microwave for drying yam as it could affect the final product. But try it out to see how it fares. You can experiment with small quantity.

Dioscorine: Found in some wild yam varieties, this alkaloid can cause nausea, vomiting, and neurological symptoms if ingested in large quantities. 2. Oxalates: Present in some yams, oxalates can contribute to kidney stone formation if consumed excessively, especially if not cooked properly. 3. Saponins: Some yams contain saponins, which can cause stomach upset in high amounts. Cooking usually neutralizes these compounds. 4. Hydrogen Cyanide (HCN): Found in bitter yam varieties, it can be harmful if not processed correctly. Proper soaking, cooking, or fermentation removes most of this toxin. To ensure safety, always cook yams thoroughly, peel them before cooking, and avoid consuming wild yams unless you’re certain they are edible.
