Wow! This is nice, I watched this video cos i just made amala,& alway its soo black & bitter ,am wondering if it was ground with d peels, its soo horribly bitter and black ,no matter how long i cook it for. But when i buy amala in bukas they are not soo black & they have no bitter taste, wanted to find out why, would have been the icing on d cake if u had made a little for us to see d outcome,,pls try to answer qtns,thanks🎉

It’s best to soak for 3 days to complete the fermentation process. If for black amala then the yam should not be peeled

Hi Ogbata, thanks for your compliments. Yes, you can use a food dehydrator. In fact I made a video on how to process poundo yam flour and I used a food dehydrator for it kzbin.info/www/bejne/fZiQg5qJp8qSp9U Personally, I won’t use microwave for drying yam as it could affect the final product. But try it out to see how it fares. You can experiment with small quantity.

Yes, it can be soaked in cold water but it is preferable to soak it with hot water because it helps to precook the yam.

Thanks for the video! I’m wondering why your flour is much lighter than the store bought elubo. I had always been told that elubo is made from the outside brown skin of the yam.

You are welcome. Well, my flour is lighter because I didn’t include the yam skin. It’s optional to include the skin while preparing the yam flour but I prefer to process it without the skin.

In the oven, lay yam pieces on a baking tray and dry at 130 degrees Fahrenheit for six to 12 hours. Alternatively, use a food dehydrator and here is a similar video to process yam flour using a dehydrator kzbin.info/www/bejne/fZiQg5qJp8qSp9U

It could be that the ones you tried were the ones that were processed with the yam skin on. But with the method shown in this video, the taste is neutral.
