Excellent and concise overview! Thank you for sharing. I would add one thing I learned. 'Gluten free' means that the amount of gluten is below some predetermined amount that allows that product to be labelled as such. It doesn't necessarily mean the complete absence of gluten. Additionally that amount is not the same for every country.

Glad you touched on the grains being altered. The wheat of today is not the wheat of the 60s. I will decline to mention the organization responsible for this. I eliminated wheat and gluten and my Migraines of 45 years went away. I can now tolerate on a limited basis. Just easier to eliminate. Fine by me. More fits the Keto lifestyle. BTW Gluten, as you say, does not break down with frying. Gluten would have to be incinerated to dissolve. It’s like plastic is still plastic after being fried.

I wil say this. I almost completely stopped eating bread and sugar and started losing weight and had almost no inflamation. Not sure if it was the sugar, less gluten, or a combo.

US gluten products contain chemicals. Cause I have no issue with gluten products in Europe I have digestive issues &i inflammation when eating US gluten products.. I've heard that US wheat is sprayed with a chemical to dry the wheat faster and sprayed again for other reasons. I'm sure its sprayed more than twice but I believe for me its what's being sprayed on the wheat that cause my problems.

My wife is Gluten Free she has Celiac. She is Vegetarian. And so am I now. My question is she has fatigue more so now during Breastfeeding. I advised she should try Thyroid Supp. Any suggestions? She is a Libra Rising Taurus Sun. And she is amazing to me.

I wish more Keto Docs would use the REAL term: 'Intestinal Permeability'. It DESCRIBES, with far more specificity, what is going on. "Leaky Gut" just sounds like another stupid slang term to be ignored. Thanks to Dr. Gillaspy's use of the PROPER term, I now know what's happening, and WHERE in the "gut" it's happening.

Recently placed on a low gluten diet. Which I do pretty good at. But bread is a problem. Every brand of gluten free bread is terrible. I can eat about one or 2 sandwiches and end up tossing out the rest of the loaf as it’s just unbearable to eat. We have our big meal of the day at noon and often have a sandwich or soup or snack at our evening meal. And since I can’t tolerate gluten free bread, our evening meal becomes challenging for me. Any suggestions on the bread? My cousin has celiac and she said she couldn’t eat bread for 2 years after going on the gluten free diet.

I'm going to chime-in so I get the response to this 8th wonder ( I don't mean Wonder Bread) of the world answer. Taste good, has the same feel of what we know as bread but gluten and keto friendly ... I think the impossible is being asked? I found one can acquire a taste for healthy foods once we retrain the brain. Example: Sugar; many people love sugary drinks as a child and absolutely hate them as an adult. That said, if you can't discover the ideal "bread" you may be able to live life without bread. There are a ton of KETO bread recipes (as you may know) on line. Do they taste like the traditional breads ... nope. So quit bread and adopt cauliflower pizza. I believe that if we crave something it may not be an authentic desire. I believe hunger and appetite are not the same thing. KETO diets often allow you to learn how it feels or the difference between hunger and appetite. Often when IF (fasting) I begin the day fasting and have cravings, but if I hold off and don't give in to the craving I pass a point where all cravings go away. What helps during this time is for me to do some physical work or exercise.

I suppose “get over it” is one way of putting it. Another way is to say “Focus on the foods that you can have”. There are so many delicious keto recipes out there that, for me, it was a matter of changing my expectations. Lunch does not have to mean sandwiches. Instead, both my lunch and my supper meals consist of deliciously flavoured meats and butter laden veggies. Yum, yum! So my advice to you is dive into those wonderful keto recipes and see what works for you!

ThumperOne thank you! I can eat it toasted at times depending on the brand. My cousin said she has to keep it frozen until she is ready eat. I may try that too. Right now I am reluctant to buy anymore gluten free bread as it is expensive and I don’t want to waste it. I appreciate your suggestion.

Wheat, Barley, Rye, and Oats are not Genetically modified crops. Dr Becky messed up on this one and does NOT know what she is talking about. GMO technology is NOT dangerous but actually is much much safer. Your post shows how clueless you are Janhoy.
