The Goan Poee. Finally. I tried ‘baking’ these on a gas stove, as well as in the oven, and I'm more than happy to show you how! Traditional Goan Poee requires toddy to bring about magic (as is also seen in true Goan Sannas), but here we're relying on more available means. Nevertheless, this recipe can still bring back your evergreen memories of the Poder carrying fresh bread in his basket with the aroma of the same, dancing on the breeze into your home.
Breads need a lot of love, I have come to understand. No wonder baking bread is a separate culinary art form. It requires affection to flow from your heart through the channel of your arms and into the dough. Science may say it's the Yeast that makes it rise, but really, it's You. 1 US Cup = 240 ml
Ingredients:
1/4 Cup or 60 ml lukewarm Water
1 teaspoon Sugar (granulated)
1 & 1/2 teaspoon Active Dry Yeast
1 Cup or 120 grams All-Purpose Flour (Maida)
1/2 Cup or 60 grams Whole Wheat Flour
1 teaspoon Salt
Additional 1/2 Cup or 120 ml Water (add only as required)
1 Tablespoon Oil
Wheat Bran, as required
If you're using a gas stove:
Heat the pan well, and keep the flame high at all times. It is this high heat that helps the Poee transform.
If you're baking them in the oven:
Preheat the oven at 250°C for 10 minutes.
Bake the Poee for 6-7 minutes on the middle rack.
